This is the recipe my dad has been using for 25 years. It's light and clean-tasting because there's no sense in masking the naturally delicious flavor of such an awesome Canadian delicacy! No tartar sauce needed!

4 walleye fillets
2 eggs, beaten
½ cup all-purpose flour
½ teaspoon garlic powder
1 pinch salt
½ teaspoon ground black pepper
2 cups crushed saltine crackers
vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Check the fillets to ensure all bones and skin have been removed. Cut the fillets into manageable pieces, if necessary.
  • Place the beaten eggs a bowl and set aside. Combine the flour, garlic powder, salt, and pepper in another bowl. Pour the cracker crumbs into a third bowl.
  • Heat the oil in a deep-fryer or large cast-iron skillet over medium-high heat to 375 degrees F (190 degrees C).
  • Dip the fillets into the flour mixture, then the eggs, and then the cracker crumbs and set fillets aside on a plate. Test the oil: it will crackle and pop when a cracker crumb is dropped into it. Carefully lower 2 fillets into the hot oil. Cook until browned, about 3 minutes per side, using tongs to turn the fillets. Transfer to a paper towel-lined plate and repeat with remaining fillets. Serve with fresh lemon wedges.

1 cup biscuit/baking mix
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon Cajun seasoning
1-1/2 teaspoons pepper
1 teaspoon salt
1/2 cup 2% milk
Oil for frying
1 pound walleye fillets, skin removed
Lemon wedges

Steps:

  • In a shallow bowl, mix the first 6 ingredients. Place milk in a separate shallow bowl. In an electric skillet, heat 1/4 in. of oil to 375°., In batches, dip fish in milk, then coat with baking mix mixture; fry for 5 minutes on each side or until golden brown and fish flakes easily with a fork. Serve immediately with lemon wedges.

1 cup finely crushed soda cracker crumbs
1/2 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt (use your favorite)
6 skinned walleyed pike fillet
2 large eggs
1 tablespoon water
vegetable shortening

Steps:

  • Mix cracker crumbs flour garlic and seasoning salt in a medium bowl
  • Scramble the eggs and mix in the water in a small bowl
  • Melt shortening in deep frier and heat to 380 degrees
  • Put Walleye fillets in the egg mixture Put Walleye fillets in the crumb mixture and coat until you can't see the fish Put in deep frier and cook until golden brown and flaky Serve with lemon wedges and tartar sauce.

2 lb. fish fillets, cut lengthwise into one inch wide strips
2 cups all-purpose flour
2 tablespoons baking powder
3 teaspoons salt
2 teaspoons sugar
1 tablespoon chili powder
1 teaspoon cayanne pepper
1 teaspoon black pepper
1 teaspoon garlic crystals (or powder)
2 tablespoons vegetable oil
12 ounce can beer
1 cup all-purpose flour, seasoned
Peanut oil for frying.

Steps:

  • Heat peanut oil in a deep fryer to 300 degrees. Slice fillets into long strips 3/4 inch by 1-1/2 inch cross section. Rinse and pat dry. Mix dry ingredients in a mixing bowl, add oil and chop or rub until the mixture is mealy. Add beer and enough water to a consistancy of watery pancake mix. Place a two section strip of towel paper near the fryer and dust with seasoned flour. Roll strips on the floured towel paper and put them into the batter five or six at a time. Using tongs ease the strip into the fryer and fry until golden. about four or five minutes. Lift out the fryer basket and drain. Then tumble fillets onto a platter covered with paper towels.

6 Walleye fillets
2 eggs
3/4 cups flour
1 cup Italian style bread crumbs
1/2 teaspoon salt
1/4 teaspoon onion powder
1/2 teaspoon paprika
4 Tablespoons oil

Steps:

  • Lightly beat eggs in a dish
  • In another dish combine flour, bread crumbs and seasoning
  • Dip fish in egg and then in flour mixture. Shake off any excess flour.
  • Add a couple of tablespoons of oil to a pan and heat pan over medium heat.
  • When pan is hot, add 3-4 fillets to pan. Cook 3 minutes per side so each side is nicely browned.
  • Remove fish from pan and place on a baking sheet lined with a baking rack. Place cooked fish in a 250° oven while you cook remaining fish.
  • Wipe out pan and add additional oil. Repeat process with remaining fish.
