Number Of Ingredients 7

2 cups milk
1 cup butter (at room temperature)
2 1/4 teaspoons dry yeast
1/2 cup lukewarm water
1 teaspoon salt
1 teaspoon sugar
6 cups flour

Steps:

  • Dissolve yeast in lukewarm water and sugar; let rise.
  • Scald milk and allow to cool.
  • In a large bowl, combine milk, butter, yeast and salt.
  • Beat in enough flour to make a stiff batter.
  • Add more flour to make a smooth soft dough.
  • Knead well.
  • Cover and let rise until dough doubles in bulk.
  • Form buns the size of a large walnut.
  • Place a smaller bun on top of a larger one, and press down firmly with one finger so that the two stick together.
  • Place on a greased pan.
  • Let rise until doubled in bulk.
  • Bake in 350 F oven for about 15-20 minutes.

1 cup milk
2 tablespoons butter, cut into pieces
½ teaspoon salt
¼ cup honey
1 (.25 ounce) package active dry yeast
¼ cup warm water
4 cups all-purpose flour

Steps:

  • Heat milk over low heat until just below boiling. Remove from heat;stir in butter, honey and salt. Set aside and let cool.
  • In a large bowl, combine yeast and lukewarm water. Set aside 5 minutes for yeast to soften. Add cooled milk mixture to softened yeast and beat in 4 cups flour.
  • Knead dough in a bowl, adding up to 1/2 cup more flour if necessary, until a smooth, soft dough forms. Divide dough into 8 balls 3 inches in diameter. Place balls 4 inches apart on lightly greased cookie sheets; pat into 4 inch rounds. Set aside, lightly covered with kitchen towels, about 1 hour, or until doubled in size.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Bake raised rounds 30 minutes, or until golden brown. Remove from oven; leave oven on. Let cool on sheets 10-15 minutes, or until cool enough to handle.
  • With a serrated knife, cut each round into six 1/2-inch slices. Place slices, cut sides down, on cookie sheets and return to oven 5 minutes. Turn slices and bake 5 to 7 min. longer, or until golden on both sides. Turn off heat and leave zwieback in unopened oven until cool, about 45 minutes. Store in a tightly covered container.

GRANDMA'S ZWIEBACK ROLLS

When Mother baked zweiback rolls-which means "twice baked"-she'd guard them, lest they disappear quickly! She would bake them on Sundays when friends came by for "fsapa" a meal of cold meat, cheese, jelly and coffee.

Yield 24 rolls.

Number Of Ingredients 7

1 package (1/4 ounce) active dry yeast
1 teaspoon sugar
1/2 cup warm water (110° to 115°)
6 to 6-1/2 cups all-purpose flour, divided
1 tablespoon salt
3/4 cup butter, melted and cooled
2 cups scalded milk, cooled

Steps:

  • In a small bowl, dissolve yeast and sugar in water; set aside. In a large bowl, combine 3 cups flour, salt, shortening, milk and yeast mixture. Beat well. Add enough of the remaining flour to form a soft dough. , Turn out onto a lightly floured surface; knead until smooth and elastic about 6-8 minutes. Dough will be soft. Place dough in a lightly greased bowl; cover and allow to rise in a warm place until doubled, about 1 hour. , Punch dough down and divide into four pieces. Divide three of the pieces into eight pieces each; shape into smooth balls and place on greased baking sheets. Divide remaining dough into 24 balls. Press 1 small ball atop each larger ball. Cover and let rise until doubled, about 45 minutes. , Preheat oven to 375°. Bake until golden, 28-32 minutes. Remove from pans to wire racks. Serve warm.

  • Mix the flour with the salt, caraway seeds and add the water as you go. Make sure the dough does not get sticky. If it gets too sticky you have added too much water and you need to add some more flour.
  • Use a knife to cut out the zwieback pieces. Cut out pieces that are roughly 2,5 - 4cm (1x1,25 inch).
  • Repurpose the leftover edges and mix them back with the rest of the dough. Go back to STEP 2 untill you run out of dough and continue to.
  • Take a moment and look at the lovely pieces you have fabricated Preheat oven to 190°C. (375°F.) and take a moment to look at the beautifull pieces of Zwieback you created.
  • Take a wooden, metal or plastic pin with about 2-3mm in diameter and push 2 holes in every piece of Zwieback.
  • Put the zwieback on a large platter in the preheated oven and bake for approximately 20 minutes. Then remove from Oven. Optional - Turn the pieces around and go for another 15 minutes or untill they change colour just a bit.

  • Heat milk over medium-high heat in a small, heavy saucepan to 180° or until tiny bubbles form around edge (do not boil). Remove from heat. Add butter; stir until melted. Stir in oil, 5 teaspoons sugar, and salt; cool to room temperature.
  • Dissolve 1 teaspoon sugar and yeast in warm water in a large bowl; let stand 5 minutes. Add milk mixture to yeast mixture; stir to combine. Add egg; stir well with a whisk. Lightly spoon flour into dry measuring cups; level with a knife. Add flour to yeast mixture, 1 cup at a time, stirring until a soft dough forms. Turn dough out onto a lightly floured surface; knead 5 minutes (dough will feel slightly tacky).
  • Place dough in large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 30 minutes or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.) Punch dough down; cover and let rise 30 minutes or until doubled in size.   • Divide dough in half; divide each half into 6 equal portions. Roll each portion into a ball. Working with 1 ball at a time (cover the remaining dough to prevent drying), gently press or roll each ball into a 2 1/2-inch-long oval on a floured surface. Roll up each oval tightly, starting with a long edge, pressing firmly to eliminate air pockets; pinch seam and ends to seal. Place rolls, seam sides down, on a large baking sheet covered with parchment paper. Cover and let rise 45 minutes or until doubled in size.
