Steps:
- Saute the mushrooms in 1 tablespoon of the oil until slightly brown, 3 to 5 minutes. Set aside.
- Heat the demi-glace brown sauce per package directions (method may vary slightly depending on brand).
- Sprinkle the pork strips all over with the salt, white pepper and flour. Toss gently to evenly coat.
- Heat a large saute pan over high heat and add the remaining three tablespoons oil. Once the oil is hot, add the seasoned pork strips and saute until cooked through, 3 to 5 minutes. Remove from pan and set aside.
- Add the onions and mushrooms to the pan and saute for 30 seconds to 1 minute. Add the white wine, brown sauce and heavy cream; cook for about 1 minute more, or until the sauce is boiling. Return the pork to the sauce, let simmer for 30 seconds, then turn off the heat to avoid overcooking.
- Garnish with chopped parsley. Serve with potato rosti.
ZURCHER GESCHNETZELTES (ZURICH-STYLE VEAL STRIPS IN CREAM SAUCE)
This is a mouthwatering Swiss specialty dish originating in the town of Zurich, Switzerland. Typically served with Rosti (Swiss hashbrowns), but equally good with mashed potatoes, spaetzle, or dumplings. There are many versions of Geschnetzeltes that can be found throughout the region in restaurants and in home kitchens, alike. I particularly like this version with lemon and parsley.

- Sprinkle the flour over the veal strips, and coat well.
- In a large frying pan over medium-high heat, melt half of the butter and half of the oil and as soon as the butter foams, immediately add the meat and quickly brown on all sides. Set aside meat to a dish and cover with foil to keep warm.
- Add remaining butter and oil to pan and sauté the onion and garlic for a couple of minutes. Now stir in the mushrooms and lemon zest and cook until mushrooms begin to soften, about 5 minutes.
- Add the wine to deglaze the bottom of the pan, using a wooden spoon to scrape up any browned bits. Stir in the veal (and juices!) and cook over low heat for another 10 minutes.
- Stir in the cream and season to taste with paprika, salt and pepper. Let bubble for a few minutes until hot, then stir in the lemon juice and serve sprinkled with fresh snipped parsley.

ZURICH RAGOUT (ZURCHER GESCHNETZELTES)
Steps:
- Melt 1 tablespoon clarified butter over high heat and quickly brown meat strips until they're no longer pink. Remove from pan and keep warm.
- Add 1 more tablespoon of clarified butter, if necessary, to the pan and stir in 2 minced shallots. Cook for 2 minutes, then add the 2 cups thinly sliced (or even shaved) mushrooms to pan and cook until soft and brown. Sprinkle mushrooms with 1 tablespoon flour and stir. Cook for 1 minute.
- While stirring, slowly add the 1 cup dry white wine and 1 cup beef broth to the mixture. Bring to a boil and cook until sauce is reduced by half.
- Stir in the 1 teaspoon lemon zest, 1/4 cup cream, and salt and pepper to taste. Add the browned meat back to the pan and warm, but do not cook the sauce any longer.
- Serve with the 2 tablespoons chopped parsley sprinkled on top.

- Sprinkle the flour over the meat and coat well. Heat half of both the butter and oil in a frying pan. As soon as the butter foams, add the meat and brown it very quickly on all sides. Set aside on a plate.
- Add the rest of the butter and oil to the pan and sauté the onion, garlic and sage for a few minutes, then add the mushrooms. Stir well and when the mushrooms start to soften, continue cooking for about 5 minutes longer.
- Add the wine to deglaze the bottom of the pan, using a wooden spoon to scrape away any crust that has formed. Add the veal and cook, stirring, until the wine has evaporated. Turn the heat down to low and cook for another 10 minutes.
- Season with salt and pepper, and at the last moment, add the cream, let it bubble for 2 minutes, then remove from the heat and serve.
VEAL ZURICH STYLE
The best meat to take is of course the fillet, but with veal topside is perfectly good as well. If you are not so much into Veal, just replace it with Beef, that works well too

- Fry the meat in a hot pan, season quickly and just let it get color, then take it out of the pan Take the butter melt in the same pan, then add the sliced mushrooms, onions and garlic Sautee quicky in the hot pan, then add the whitewine reduce then add the demi glace and cream, cook till a creamy consistency
- Just before serving add the veal to the sauce Boil up barely, add whipped cream and serve
- Serve with Rosti potatoes and vegetables

Steps:
- 1. In a small bowl, use a pastry blender or fork to combine the flour and butter; set aside.
- 2. Heat oil in a large skillet. Brown veal, a few pieces at a time, in hot oil. Using a slotted spoon, remove browned veal from skillet; place in a sieve over a medium bowl to drain; set drippings aside.
- 3. Add onion to the oil in skillet; saute until transparent. Add mushroom; saute until tender. Add wine and half and half; stir in flour mixture. Simmer 3 to 4 minutes, stirring constantly, until slightly thickened. Season with salt and pepper. Stir in the drippings from the veal and the browned veal. Heat through.
- 4. To make rosti: Boil or bake potatoes until about half cooked. Slice hot potoates.
- 5. Melt lard in large skillet. Add potato slices. Cook until potatoes soften and form a golden crust. Serve veal mixture with rosti.

- In a large frying pan, heat 1 tablespoon of butter over medium-high heat. Cook the veal in batches. You don’t want to overcrowd the meat. We want them to be nicely browned. You can also use oil instead of butter. Remove the meat to a bowl and set aside.
- Add the remaining 1 tablespoon of butter to the pan and cook the mushrooms and onion until they have softened. This can take anywhere between 5-10 minutes. It’s frustrating too because the smell of the two is so beautiful together. Add the white wine and let it bubble away for a few minutes, still keeping the heat on medium-high.
- In a small bowl, mix together the double cream, stock, and cornstarch. Add this liquid to the pan and let everything simmer gently for a few minutes. Taste for seasoning. I always like to add a little extra salt and pepper, especially at this stage.
- Return the meat to the pan and mix well. Serve with rosti or linguine. Sprinkle with parsley before serving.
