Time 2h20m

Yield 10 servings

Number Of Ingredients 29

10 meaty veal shanks, 2 to 3 inches thick
Salt and pepper
1/2 to 2/3 cup all-purpose flour
6 tablespoons butter, divided
4 tablespoons extra virgin olive oil, 4 turns of the pan
1 large onion, chopped
2 large carrots, peeled and cut into a fine dice
4 ribs celery, chopped
6 to 8 cloves garlic, crushed
3 sprigs fresh rosemary, stripped and finely chopped, about 2 tablespoons
1/2 teaspoon allspice
2 cups white wine
1 (28-ounce) can chunky style crushed tomatoes
2 cups chicken stock
2 (14-ounce) cans, cannelloni beans, drained
1 lemon, rind cut into pieces
2 lemons, zested
4 cloves garlic, crushed
6 anchovy fillets in oil, drained
1 cup flat leaf parsley leaves, 3 handfuls
Garlic Lemon Potatoes, recipe follows
2 bulbs garlic
Extra-virgin olive oil, for drizzling
3 1/2 pounds white skinned medium potatoes, peeled and cut into chunks
1/4 to 1/2 cup half-and-half or more, if needed
4 tablespoons unsalted butter
1/2 cup chicken stock
1 lemon, juiced
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Place a large, heavy bottomed skillet on the stove and heat pan over moderate to high flame. Salt and pepper the shanks and coat lightly and evenly in flour. Working in 2 batches, brown shanks in 1 1/2 tablespoons each butter and olive oil. Transfer shanks to a large roasting pan. Add remaining butter and oil to the pan and saute the root vegetables and crushed garlic 5 minutes, seasoning them with rosemary, allspice, salt and pepper. Add wine to the pan and reduce 2 to 3 minutes, lifting pan drippings up off the bottom of your pot. Add tomatoes, chicken stock and white beans to the pan and remove from heat. Stir to combine sauce. Pour sauce and vegetables evenly over shanks. Cover roasting pan tightly and roast for 1 1/2 to 2 hours, until meat is very tender and pulling easily from bone. Baste meat in juices and sauce every 1/2 hour. In the last 1/2 hour, add lemon rinds to sauce.
  • Combine lemon zest, garlic, anchovies and parsley in a large pile. Mill the mixture with your knife into a finely chopped condiment.
  • To serve, place shank in a rimmed plate and spoon juices, beans and vegetable bits over and around meat. Top with a generous sprinkle of gremolata. Serve with Sauteed dark greens and crusty bread and/or garlic lemon potatoes.
  • Preheat oven to 375 degrees. Cut ends of garlic bulbs off to expose cloves. Coat the bulbs lightly with a drizzle of extra virgin olive oil, about 1 tablespoon. Wrap bulbs in a double layer of tin foil and place packets in a hot oven. If preparing with above menu, place cloves in oven half way through cooking process of Osso Buco. Roast garlic 45 minutes. Remove bulbs from oven, unwrap and let cool 10 minutes.
  • Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return cooked potatoes to the hot pot to dry them out. Add half-and-half, butter and chicken stock to the pan. Squeeze roasted garlic into the potato pot and mash with a masher into a slightly lumpy consistency. Add the juice of 1 lemon and salt and pepper, to taste. Serve immediately.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 25

1 lb ground veal
1 large egg, beaten
1/3 cup Italian seasoned breadcrumbs, a couple of handfuls
1/4 cup grated parmigiano or 1/4 cup romano cheese
1/4-1/2 teaspoon freshly grated nutmeg, eyeball it
coarse salt
black pepper
2 tablespoons extra virgin olive oil, 2 turns of the pot
2 carrots, peeled
2 stalks celery, and their greens
1 medium yellow onion, peeled and halved
coarse salt
pepper
1 bay leaf
1/2 cup white wine
1 (14 ounce) can white beans, cannellini, drained
1 (15 ounce) can diced tomato puree or 1 (15 ounce) can coarsely ground tomatoes
3 cups chicken stock, available in re-sealable boxes on soup aisle
2 cups beef stock, available in 1 cup small boxes on soup aisle
1 cup egg pasta, broken egg fettuccini or 1 cup egg noodles
2 garlic cloves, cracked away from skins
1 (2 ounce) can flat fillet anchovies, drained
1/4 cup loosely packed flat leaf parsley (handful)
1 lemon, zest of
crusty bread, to pass at table

Steps:

  • Combine the veal and the next 5 ingredients then reserve mix and rinse off your hands.
  • Heat a medium soup pot over medium to medium-high heat.
  • Begin to chop veggies while pot heats up: dice carrots into 1/4 inch pieces, chop celery and onion.
  • Add extra-virgin olive oil to hot pot and carrots. Turn carrots to coat them in oil and add celery and onion as you get them chopped up. Work near the stove so you can chop, then drop into the pot.
  • Season the vegetables with salt and pepper and a bay leaf. Stir vegetables and cook 5 minutes to begin to soften. Do not let vegetables brown, reduce heat if necessary.
  • Add the wine and cook for 1 minute. Next, add beans and tomatoes and stock to the pot. Put a lid on the pot and raise heat to high. When soup boils, about 3 minutes, add 1-inch balls of veal dumplings directly to the pot. When you are done adding the veal, stir in the egg noodles. Simmer stoup for 6 minutes to cook noodles and meat dumplings. Adjust seasonings and turn the heat off, then let stoup stand a couple of minutes.
  • Pile garlic, anchovies, parsley and lemon zest on a cutting board and finely chop the mixture, then transfer to a small dish.
  • Serve stoup in shallow bowls with a couple of teaspoonfuls of gremolata on top. Stir the gremolata throughout the stoup and pass crusty bread at the table for dipping and mopping.

CLASSIC OSSO BUCO

Classic Osso Buco image

Veal shanks are normally cut very thick but Lucinda prefers them to be about 3/4-inch thick. Ask your butcher for a special cut, otherwise they will need to cook longer. From the book "Lucinda's Rustic Italian Kitchen," by Lucinda Scala Quinn (Wiley).

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Number Of Ingredients 11

6 pieces veal shank, cut about 3/4 inch thick
Coarse salt
Freshly ground black pepper
1/4 cup all-purpose flour, preferably Wondra
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 1/2 cups best-quality Italian white wine
3 tablespoons minced fresh flat-leaf parsley
1 1/2 tablespoons minced fresh orange peel
1 1/2 tablespoons minced fresh lemon peel
3 cloves garlic, finely minced

Steps:

  • Generously season both sides of the veal shanks with salt and pepper. Lightly coat in the flour and shake off the excess.
  • Heat a large heavy-bottomed pan over high heat. Add the olive oil and butter and swirl them around the pan. Add the shanks and cook for 3 minutes per side, until golden brown. Add the wine to the pan and stir it occasionally to deglaze the browned bits on the bottom of the pan. Reduce the heat to medium-low, partially cover, and simmer for 30 minutes. Turn the meat and cook until tender, about 30-45 minutes more.
  • Meanwhile, in a small bowl, combine the parsley, orange and lemon peel, and garlic. Serve the shanks topped with a sprinkling of the citrus-parsley mixture.
