ZUNI CAFé'S ZUCCHINI PICKLES



Zuni Café's Zucchini Pickles image

At San Francisco's Zuni Café, these turmeric-tinged zucchini pickles are served with a hamburger, but they are also delicious paired with charcuterie, pâtés and smoked fish. Easy to make and wonderful to have on hand, they keep indefinitely in the refrigerator.

1 pound zucchini, ends trimmed
1 small yellow onion, peeled
2 generous tablespoons kosher salt
Ice water and ice cubes
2 cups apple-cider vinegar
1 cup granulated sugar
1 1/2 teaspoons dry mustard
1 1/2 teaspoons yellow or brown mustard seeds, or a combination
1 teaspoon turmeric

Steps:

  • With a mandolin, cut zucchini lengthwise (or crosswise, if you prefer) in 1/16-inch slices. Cut onion crosswise the same thickness.
  • Place zucchini and onion in a low wide bowl, toss with salt and cover with ice water. Add a few ice cubes. Leave for 1 hour, until faintly salty and slightly softened when tasted. Drain, discard ice and dry vegetables thoroughly between kitchen towels. Rinse and dry bowl.
  • Make the brine: Combine vinegar, sugar, dry mustard, mustard seeds and turmeric in a nonreactive saucepan, and simmer over medium-high heat for about 3 minutes. Turn off heat and set aside until just warm to the touch.
  • Return zucchini to the bowl and pour cooled brine over, then stir to distribute spices.
  • Transfer mixture and brine to pint jars and refrigerate for at least a day before serving.

Squash Pickles With Zucchini or Yellow Summer Squash image

These easy squash pickles are the perfect way to use all of that abundance of zucchini or summer squash. Use this recipe to extend the season.

Number Of Ingredients 8

2 pounds zucchini or summer squash (sliced, about 7 cups)
2 medium onions (halved and sliced, about 2 cups)
1/4 cup pickling salt
2 cups white vinegar
1 to 2 cups sugar
1 teaspoon celery seed
1 teaspoon ground turmeric
2 teaspoons mustard seed

Steps:

  • Gather the ingredients and canning equipment.
  • Place zucchini or summer squash and onions in a large nonreactive pot ; add the pickling salt and enough water to cover. Let stand for 2 hours.
  • Pour the mixture into a colander; rinse well with cold water and drain thoroughly.
  • Return the rinsed squash to the nonreactive pot.
  • Pour the vinegar into a 2-quart saucepan and bring to a boil and stir in 1 cup of the sugar, celery seed, turmeric, and mustard seed.
  • Pour the hot vinegar over the squash and onions. Taste and add up to 1 cup additional sugar depending upon your preference. Let stand for 2 hours.
  • Meanwhile, prepare the jars and lids . Wash the jars and lids in hot, soapy water. Fill a large canner with water.
  • Place a rack in the pan and add the jars. Bring to a simmer. Turn the heat down to low to keep the jars hot.
  • Put the lids in a separate saucepan and cover with water. Bring to a bare simmer; do not boil. Keep them hot in the barely simmering water until it's time to seal the jars.
  • Bring the squash and vinegar mixture back to a boil, cook for 5 minutes then remove from the heat.
  • Pack the boiled squash pickles into the hot sterilized jars leaving 1/2-inch headspace. Wipe the edges of the jar with a clean, damp paper towel and seal with the lid and screw-on bands. Do not overtighten.
  • Process pint or quart jars in the boiling water bath for 10 minutes from 1 to 1,000 feet, 15 minutes from 1,001 to 6,000 feet, or 20 minutes above 6,000 feet in altitude. Keep the water at least 1 inch above the tops of the jars, adding extra boiling water to cover, if necessary. Serve and enjoy.

Refrigerator pickles for some of the zucchini bounty I am anticipating from second planting of zukes. Note - this is a REFRIGERATOR pickle recipe - not intended for canning & storing in the pantry. Adapted from Judy Rodgers' "The Zuni Café Cookbook" nabbed from the LA Times Food & Drink Weekly.

1 lb zucchini
1 small yellow onion
2 tablespoons kosher salt
2 cups cider vinegar
1 cup sugar
1 1/2 teaspoons dry mustard
1 1/2 teaspoons mustard seeds, crushed (yellow & brown)
1 teaspoon turmeric, ground

Steps:

  • Wash and trim the zucchini, then slice them one-sixteenth-inch thick; a mandoline works best. Slice the onion very thin as well.
  • Combine the zucchini and onions in a large but shallow nonreactive bowl, add the salt and toss to distribute. Add a few ice cubes and cold water to cover, then stir to dissolve the salt.
  • After about 1 hour, taste and feel a piece of zucchini -- it should be slightly softened. Drain and pat dry.
  • Combine the vinegar, sugar, dry mustard, mustard seeds and turmeric in a small saucepan and simmer for 3 minutes. Set aside until just warm to the touch. (If the brine is too hot, it will cook the vegetables and make the pickles soft instead of crisp.).
  • Return the zucchini to a dry bowl and pour over the cooled brine. Stir to distribute the spices. Transfer the pickle to jars, preferably ones that have "shoulders" to hold the zucchini and onions beneath the surface of the brine. Seal tightly and refrigerate for at least a day before serving to allow the flavors to mellow and permeate the zucchini, turning them a brilliant chartreuse color.

  • Slice trimmed zucchini with mandoline- 1/16 inch thick. Combine with thinly sliced onion in non reactive bowl- add salt, toss, and then cover with water and ice. Stir to dissolve salt. Drain and pat dry in one hour. Combine vinegar, sugar, dry mustard, mustard seeds and tumeric in sm saucepan and simmer 3 minutes. Cool to warm-- Cover vegetables with the pickle juice- seal and refrigerate.
