LYNDA'S FAVORITE ZUCCHINI HOT DOG RELISH
We love to add relish to our hot dogs. But we've never had one with zucchini, so this recipe intrigued us. We loved it! The flavors are tasty and it really gives the hot dog an extra zing. Try it on beans and vegetables, too.

Steps:
- 1. Grind 10 cups of zucchini and place in large pot (with a lid). Add the salt and garlic salt. Cover with cold water and soak overnight. (I add lots of ice cubes and place pot in a cool place. If not, put it in the fridge!)
- 2. The following morning, drain and rinse well in a large colander. Return to pot and add the remaining ingredients. Bring to a boil and then simmer for 30 minutes, stirring occasionally. Seal in jars while the relish is very hot.
- 3. Place jars in canning pot and cover with water. Boil the submerged jars for at least 15-20 minutes to make sure seals are airtight. Remove jars from canning pot with tongs and place on a towel in your sink until they cool (this prevents jars from cracking).
- 4. After opening a jar of relish, store opened jars in the fridge!
SHEILA'S HOT DOG/HAMBURGER RELISH
I used to make this all the time at this time of year when the family was all at home. It is a really good recipe given to me by my late friend Barbara some 30 years ago.

Steps:
- Put 1st 4 ingredients through food chopper.
- Add 1/2 cup salt and pour boiling water over; mix well.
- Leave overnight and add remaining ingredients.
- Thicken with 1-2 tablespoons cornstarch and boil 15 minutes.
- Pour into hot sterilized jars.
- Unfortunately I have no yield on this recipe (but had to fill in a quantity to submit), and I kept it all in the refrigerator, eliminating the dreaded "canning".
- This makes a nice gift, so maybe it won't stay in the frig too long.

HAMBURGER RELISH
The Heinz Hamburger Relish can't be found on the store shelves anymore so I found this recipe to make my own. Very easy and quick to make.

HOT DOG RELISH
I have tried a lot of relishes and this one is one that has been my all time favorite. Cucumbers, apples, cabbage, peppers and cauliflower.

Steps:
- In a food processor or blender, add all prepared vegetables. You want your vegetables to be very fine.
- In a large stainless steel bowl sprinkle salt over vegetables, top with water, let soak for 4 hours.
- Drain well, using a large strainer and the back of a large spoon, press out as much liquid as possible.
- Transfer to large stainless steel pot.
- In bowl mix together dry mustard, flour, celery seed, sugar, turmeric, mustard seed and vinegar, mix well. Add to vegetables.
- Cook on medium heat, stirring often, for 15 minutes.
- Process pints.

HOT DOG RELISH
This is my mom's relish recipe. It is easy. Use it on hot dogs or in macaroni salad. Delicious! It makes approximately 9 to 12 pints.

Steps:
- Place onions, cabbage, bell peppers, and tomatoes in a food processor, and pulse until finely minced. Drain, and remove contents to a large bowl. Sprinkle with salt, cover, and let stand overnight. Pour contents into a colander; rinse, and drain. Return contents to bowl.
- In a separate bowl, stir together mustard seed, celery seed, turmeric, sugar, white vinegar, and water. Pour over vegetable mixture, and stir to combine.
- Pour mixture into a large pot, and bring to a boil over high heat. Boil for 5 to 10 minutes. Store, refrigerated, in sterilized, sealed pint jars.

NORMA'S HOT DOG & HAMBURGER RELISH
This yummy recipe brings back memories of a relish my grandmother used to serve. We used it on everything! This relish is just as tasty...and makes a lot. A perfect hostess gift.

Steps:
- 1. Chopped fine the tomates, onions and peppers
- 2. Place in a wire strainer to drain off extra liquid from the tomatoes, peppers and onions.
- 3. Place all into a large stainless steel pot. (Using any other type of pot might stain it from the acid from the tomatoes).I also have used a roaster pan when I didn't have stainless steel.
- 4. Add sugar, mustard seed, celery seed and vinegar stir well.
- 5. Place on stove with burner on med-high heat.Bring all to a boil, remove from heat and add turmeric and stir once again.
- 6. Place in sterilized pint jars; one at a time, leaving 1/2 inch from top of jar. Wipe dry the edge of opening with a clean cloth.
- 7. Place lid and band on jar and twist tight. Continue filling other jars and repeat as above.No need to process. They will seal themselves.
- 8. One batch makes 7 to 8 pint jars of relish.
ZUKE NOT CUKE HAMBURGER/HOTDOG RELISH
Another way to use up those big zucchinis...Surprisingly, you can't tell the difference between this and relish made from cucumbers!

- Combine vegetables in a large bowl. Add salt and water, and let stand overnight (refrigerated).
- Next day drain liquid off. Heat vinegar, sugar, mustard and celery seed to boiling. Add vegetable mixture and bring back gently to boil. Reduce heat and cook slowly for 10 minutes.
- Follow canning procedure to seal in hot sterilized jars.
