- In a small bowl, combine cornstarch and sugar. Stir in water, soy sauce and sesame oil until smooth; set aside., In a large nonstick wok or skillet, stir-fry broccoli in hot oil 3 minutes. Add pepper, onion, garlic and ginger; stir-fry 2 minutes. Reduce heat. Stir soy sauce mixture; stir into vegetables with nuts. Cook and stir 2 minutes or until thickened.,

- Heat oil and garlic in a large skillet or wok over medium heat. Add onion and cook until almost translucent, about 5 minutes. Add zucchini and cook until zucchini is slightly crisp, but not mushy, stirring constantly, about 10 minutes. Add diced tomatoes and cook for 5 minutes more. Add Italian seasoning, salt, and pepper. Serve immediately.

- Cut zucchini into bite sized sticks or slices.
- Heat a non-stick pan over medium heat and add almonds.
- Cook for about 4-5 minutes until golden brown and lightly toasted.
- Stir constantly or they will burn.
- You can also toast them under a broiler/griller if you prefer.
- Set almonds aside.
- Add zucchini and garlic to pan.
- Cook until tender but not mushy.
- Add a small amount of water to the pan if needed to prevent burning or sticking.
- Stir through the soy sauce and almonds and serve.
