1 clove garlic, minced
1/4 teaspoon red pepper flakes
1 28-ounce can whole San Marzano tomatoes
Kosher salt
1 medium zucchini, cut into small chunks
1/2 pound capellini
1/4 cup chopped fresh basil
Grated parmesan cheese, for topping

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, about 1 minute. Crush the tomatoes into the skillet with your hands and add the juice. Add 1/2 teaspoon salt and simmer, stirring occasionally, until the sauce is slightly thickened, about 15 minutes. Add the zucchini and cook until crisp-tender, about 5 minutes. Season with salt.
  • Meanwhile, bring a large pot of salted water to a boil. Add the capellini and cook as the label directs. Drain and add to the sauce along with the basil; toss to coat. Top with parmesan.

5 tomatoes
3 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
3 zucchini, cut into matchsticks
1 teaspoon herbes de Provence
salt and freshly ground black pepper to taste
¾ cup heavy whipping cream
1 tablespoon chopped fresh basil, or to taste
1 (8 ounce) package feta cheese, diced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and keep warm.
  • Bring a saucepan of water to a boil while spaghetti is cooking. Cut a cross into the bottom of each tomato and place them in the boiling water for 1 minute. Remove with a slotted spoon and immediately rinse under cold water. Peel, remove central core, and chop pulp.
  • Heat olive oil in a skillet over medium heat and cook onion until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add zucchini and cook, stirring occasionally, until softened, about 5 minutes. Season with herbes de Provence, salt, and pepper. Add tomatoes and cream and bring to a boil. Mix in basil. Stir in feta; cook until warmed through but sauce is not boiling, about 1 minute. Stir in drained spaghetti.

2 large zucchini (cut with a julienne peeler or spiralizer)
2 teaspoons sea salt
2 tablespoons cooking oil
2 medium onions (chopped)
3 cloves garlic (smashed)
28 ounce can diced tomatoes
2 teaspoons honey or coconut sugar
1 teaspoons balsamic vinegar
1 teaspoon sea salt (more to taste)
Optional: parmesan cheese or a little nutritional yeast (to serve)

Steps:

  • Place the julienned zucchini in a large bowl and toss with 2 teaspoons of sea salt. Set aside.
  • Heat the oil in a medium-sized pot over medium-high heat. Add the onion and cook, stirring frequently, for 10 minutes. Add the garlic and cook for 2 minutes more. You want the onion to be nice and brown.
  • Scrape the onion and garlic into a blender and add the diced tomatoes. Blend until smooth. Pour the sauce back into the pot and add the remaining ingredients. Heat until the sauce is warm.
  • Rinse the zucchini pasta well under hot water then gently squeeze handfuls of it to dry.
  • Serve the pasta with the sauce on top and a little parmesan cheese or nutritional yeast.

This zucchini pasta sauce with meat is such a hearty, flavorful meat sauce that includes zucchini and corn for extra flavor and nutrition.

1 pound ground beef (, lean)
2 Tbsp garlic ((about 4 large cloves), minced)
1 tsp onion powder
2 tsp oregano (dry (or 2 Tablespoons fresh, chopped))
2 tsp paprika (smoked (or sweet if you want less spice))
¼ tsp black pepper
6 ounces tomato paste ((one small can))
2 cups beef broth (or stock)
½ cup corn (, frozen or fresh (if using canned, drain well))
1-½ cups zucchini (chopped small)

Steps:

  • Cook the ground beef in a heavy skillet until browned, about 5-10 minutes, chopping and stirring often. (I love my cast iron skillet!)
  • When the ground beef is browned, drain off the excess fat.
  • With the pan on low-medium heat, add garlic, oregano, onion powder, and paprika and cook until garlic softens (about 2 minutes).
  • Add black pepper, tomato paste, beef broth and stir to mix together. I like to use my silicone spatula for this, but you could also use a whisk to get the tomato paste smooth.
  • Once mixed together, add corn and zucchini and stir in. Cover and simmer on low-medium for 20-30 minutes, stirring occasionally.
  • While sauce is simmering, cook your pasta according to package directions. This sauce is enough for one pound of pasta.
  • After 20-30 minutes of simmering, uncover sauce, turn off heat, and let sit 5 minutes before serving over pasta (or mixed in if you prefer).
  • Enjoy with my yummy Cheese Toast and side salad for a complete, wholesome, satisfying meal!

Zucchini, approx. 8 cups sliced (about 4 large)

  • Put quarter stick of butter in bottom of 8 quart pot. Add sliced zucchini, stewed tomatoes, tomato paste, onion and garlic salt, stir. Cook covered on medium heat until soft, stirring occasionally (approx. 60-80 minutes). If any excess liquid, remove cover for last 5 minutes and cook down.
  • Option: This also tastes good with grated chedder on top, have not tried any other cheese as yet.

1/2 cup hot prepared marinara sauce (favorite jarred or homemade marinara)

Steps:

  • Using a mandolin, julienne vegetable peeler, spiralizer, or your awesome knife skills, cut the zucchini into strands that resemble spaghetti, leaving the soft middle and seeds aside for another use.
  • Heat the oil in a sauté pan over medium heat; add the garlic and sauté for about 1 minute, do not brown the garlic. Add the zucchini stands, along with a pinch of salt, and cook, tossing often until they are tender but still have some bite (al dente) - about 3 to 4 minutes. Add the thyme leaves and red pepper flakes, if using. Toss well. Taste and season with salt and freshly ground pepper. Place on a warmed plate, top with 1/2 cup of sauce and Parmesan cheese.

3 small, firm zucchini, seeded and chopped
1 small onion, finely chopped
4 cloves garlic, chopped
1 chile pepper, seeded and finely chopped or 1 teaspoon crushed red pepper flakes
1 tablespoon fresh rosemary, finely chopped
Salt and pepper
2 tablespoons tomato paste
1/2 cup dry red or white wine
One 28- to 32-ounce can San Marzano tomatoes
1 cup passata or tomato sauce
A few leaves fresh basil, torn
1 pound pici or bucatini pasta
2 tablespoons butter
Grated Pecorino cheese (tangy) or Parmigiano-Reggiano (buttery, nutty)

Steps:

  • Heat a Dutch oven or pot over medium to medium-high heat. Add the zucchini and lightly brown a few minutes. Then add the onion, garlic, chile and rosemary. Season with salt and pepper and cook 7 to 8 minutes more. Add the tomato paste and stir for 1 minute. Stir in the wine, then add the tomatoes and passata. Stir in the basil and simmer over low heat for 20 minutes more. Cool and store. Reheat over medium heat.
  • To serve, bring a large pot of pasta water to a boil, salt the water and cook the pasta until al dente. (Save a cup of the starchy cooking water.) Drain the pasta and toss it with the butter, half the sauce, 1/2 cup of the starchy pasta water and some cheese. Serve in shallow bowls and top with more sauce and cheese. Use more of the starchy pasta water to loosen up the pasta if it gets tight.
