1 ½ teaspoons onion powder
1 ½ teaspoons seasoned salt
1 ½ teaspoons garlic powder
2 zucchini, thinly sliced lengthwise and 1/4-inch wide

Steps:

  • Whisk olive oil, onion powder, seasoned salt, and garlic powder together in a bowl; add zucchini and marinate for about 30 minutes.
  • Preheat grill for medium heat and lightly oil the grate.
  • Grill zucchini slices on the preheated grill for about 10 minutes. Flip and grill until edges are crisp and grill marks are present, about 10 minutes more.

  • Grate unpeeled zucchini.

  • Combine bacon, onion, zucchini, cheese seasoning eggs and oil with sifted flour.
  • Pour into lightly greased slice baking tray and bake in a moderate (180C) oven for 30 to 40 mins or until cooked.

1/4 cup breadcrumbs (plain or Italian)
1/4 cup parmesan cheese, grated
3 tablespoons mayonnaise
1 medium zucchini, sliced into 1/2 inch thick slices

Steps:

  • Mix bread crumbs and cheese in one bowl.
  • In another bowl, put mayonnaise.
  • With fingers, dip each piece of zucchini first into mayonnaise and then into cheese mixture.
  • Put zucchini on ungreased cookie sheet and bake at 350 degrees for 20 minutes.
  • If crispier zucchini is desired, bake in hotter oven.

salt & pepper to taste
⅓ cup parmesan cheese (shredded, divided)

Steps:

  • Preheat oven to 425°F.
  • Toss zucchini slices with olive oil, seasoning, salt & pepper and about 2 tablespoons of the parmesan cheese.
  • Place on a baking sheet and top with remaining parmesan cheese. Bake 5 minutes.
  • Turn oven to broil, place pan near the top and broil 3-5 minutes or until cheese is melted and zucchini is tender crisp.

6 large eggs
1 Cup flour
1 tsp baking powder
150g onion (large)
1 Cup grated cheese
Bacon 100g
500g zucchini/courgette

Steps:

  • Whisk eggs
  • Add flour and baking powder and whisk. Don't worry about a few lumps, they will disappear during cooking
  • Finely dice the onion, add to the eggs (you do not need to precook anything, the onions will go lovely and sweet)
  • Finely slice the bacon, add to the eggs,
  • Grate the zucchini and add to the eggs, along with the grated cheese
  • Mix everything together
  • Pour into a loaf lined with baking paper
  • Bake at 180 degrees celsius (360 f) for around 40-50 mins until golden

  • Preheat the oven to 180°C (350°F). Grease and line a rectangle (20cm x 30cm x 5cm) baking pan with oil or butter and baking paper, making sure there is some overhang.
  • Heat the oil in the frying pan over medium high heat. Add the onions and cook, stirring regularly until the onions are starting to soften (5 mins). Add the carrots and garlic and continue to cook until the onions are completely softened and slightly golden in colour. Add the bacon, zucchini and stock powder to the pan and cook for a further 5 minutes or until the zucchini is cooked slightly and there is no moisture left in the pan. Set aside to cool slightly in the frying pan.
  • Add the flour to the slightly cooled vegetables and stir gently so the flour is evenly distributed. Add the grated tasty cheese and half the egg mixture and stir gently to combine and avoid any clumping. Once combined add the remaining egg mixture, salt and milk and continue to stir until incorporated and smooth.
  • Pour the mixture into the prepared baking pan. Smooth it out evenly and sprinkle over the grated parmesan cheese. Arrange the tomato slices over the top of the mixture and grind over some black pepper.Place in the preheated oven and bake for 25-30 minutes or until the middle is cooked and firm to the touch. Remove from the oven and allow to cool in the pan for 15 minutes before carefully removing onto a flat surface. Cut into squares or slices for serving.
