1 pound bulk pork sausage
1 tablespoon canola oil
3 medium zucchini, thinly sliced
1 medium onion, chopped
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 package (8.8 ounces) ready-to-serve long grain rice
1 teaspoon prepared mustard
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup shredded sharp cheddar cheese

Steps:

  • In a large skillet, cook sausage over medium heat 5-7 minutes or until no longer pink, breaking it into crumbles. Drain and remove sausage from pan., In same pan, heat oil over medium heat. Add zucchini and onion; cook and stir 5-7 minutes or until tender. Stir in sausage, tomatoes, rice, mustard, garlic salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 5 minutes to allow flavors to blend., Remove from heat; sprinkle with cheese. Let stand, covered, 5 minutes or until cheese is melted.

This is a recipe my grandmother used to make at family gatherings. She was a great cook and has passed on now but we still manage to keep her recipe alive!

3 cups zucchini, diced
1 onion, chopped
4 eggs, beaten
1 cup buttermilk baking mix
½ cup vegetable oil
½ cup grated Parmesan cheese
½ teaspoon dried marjoram
1 teaspoon chopped parsley, or to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6-inch pan or a 12-inch pie plate.
  • In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
  • Bake for 30 minutes, or until lightly brown.

2 tablespoons vegetable oil
1/2 pound fully cooked smoked Polish sausage, cut into 1/2-inch diagonal slices
1 cup chopped onion
1 cup sliced celery
1/2 cup chopped green pepper
1 garlic clove, minced
1/2 teaspoon dried oregano
1/2 teaspoon pepper
4 to 5 medium zucchini, sliced
4 to 5 medium tomatoes, coarsely chopped
Herb seasoning blend to taste

Steps:

1/4 cup vegetable oil
2 cups shredded zucchini
1 onion, chopped
1/2 lb bulk sausage
2 cups swiss cheese, grated
1 cup milk
1/2 cup half-and-half
2 tablespoons parmesan cheese, grated
2 eggs, slightly beaten
1 cup flour
1/2 teaspoon white pepper
1 tablespoon butter, melted

Steps:

  • Heat oil in a large frying pan over medium heat and sauté the zucchini and onion for 5 minutes or until soft. Put the zucchini and onion in a large bowl.
  • Add the sausage to the pan. Break up the sausage and cook over medium heat until no longer pink. Drain the sausage and add to the bowl. Mix zucchini, onion and sausage. Then add the remaining ingredients.
  • Mix well and pour into a 9x9 inch baking pan. Bake for 40 minutes at 400 degrees F. Cut into squares. Serve warm or cold.

¼ cup butter
4 cups thinly sliced zucchini
1 cup coarsely chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon dried basil
½ teaspoon dried oregano
2 eggs, well beaten
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) tube refrigerated crescent rolls
2 tablespoons yellow mustard

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat butter in a skillet over medium heat; cook and stir zucchini and onion until tender, about 10 minutes. Add salt, pepper, garlic powder, basil, and oregano; stir to coat.
  • Whisk eggs and mozzarella cheese together in a bowl. Stir zucchini mixture into egg mixture.
  • Separate crescent dough into two rectangles and place into a 8x12-inch baking dish; press into bottom and slightly up sides of dish to form a crust. Spread mustard onto crust. Pour zucchini-egg mixture into crust.

Coarse salt
Pizza dough (see recipe)
2 or 3 sweet Italian sausages, meat removed from the casing and crumbled
2 teaspoons minced garlic

Steps:

  • Preheat oven to 500 degrees.
  • Thinly slice zucchini, salt lightly and let sit at least 20 minutes, then drain off any accumulated liquid.
  • Top pizza rounds with zucchini, sausage and garlic and bake about 15 minutes, or until nicely browned.

1/2 teaspoon black pepper, freshly ground
2 tablespoons Dijon mustard
2 eggs
8 ounces monterey jack cheese, shredded
1 prepared pie crust

Steps:

  • Preheat oven to 375 degrees.
  • Saute zucchini, onions and garlic in olive oil until soft. Stir in parsley, herbes de provence, salt and pepper. Remove from heat.
  • Beat the eggs and then add the cheese to the beaten eggs. Pour into the veggie pot and combine.
  • Spread dijon mustard on bottom of pie crust. Add zucchini mixture to crust. Bake for 35-40 minutes.
