ITALIAN ZUCCHINI SALAD
My husband, Robert, doesn't care much for zucchini, but even he likes this salad, so it's one I make often. The dressing is generous-it can be used on other green salads and even to marinate meats for the grill. I'm always trying new recipes, and I have lots of eager tasters with three children, six grandchildren and six great-grandchildren. I've entered recipe contests many times before, but this is the first time I've had a recipe picked. It's the nicest feeling!

Steps:
- Make the pesto: Add the basil, parsley, chives, pine nuts, garlic, lemon juice, and salt to a high-powered blender or food processor. Blend on high speed, scraping down the sides with a rubber spatula as needed, until well combined, 1-2 minutes.
- Make the zucchini pasta salad: Heat the vegetable oil in a large, high-walled skillet over high heat. Working in batches, fry the zucchini rounds in a single layer for 1-1½ minutes per side, until the outside is golden brown but the zucchini is still slightly crisp. Transfer to a paper towel-lined plate to drain, blotting away any excess oil.
- Transfer the zucchini to a large serving bowl. Add the spinach and red wine vinegar, and toss gently to combine. Add the penne, pesto, lemon zest, capers, and mozzarella, and fold gently until well combined. Season with salt and pepper to taste.
- Garnish with the basil leaves and serve slightly warm, or refrigerate until ready to serve.
- Enjoy!

- Meanwhile, begin prepping the vegetables: Thinly slice the onion. If desired, place in cold water to reduce the sharp flavor. Chop the parsley, set aside.
- Cut the zucchini into quarters lengthwise, then cut crosswise into 1 inch pieces (see note 1). Place the zucchini on a parchment-lined baking sheet. Drizzle the zucchini with olive oil and toss to coat. Spread the zucchini out evenly on the baking sheet and sprinkle with kosher salt and black pepper.
- Once the oven is preheated, bake the zucchini for 20 minutes. Remove the tray from the oven and flip the zucchini pieces. Bake for an additional 10 minutes, or until the zucchini is deep golden brown. Let the zucchini cool down on the tray for a few minutes.

- Make the Salad: Slice the zucchini halfway through lengthwise, being careful not to pierce through the center (*Laura's note: you want to create a part slice in order to create spiral cuts, otherwise the spiralizer will not work properly). Spiralize the zucchini with Blade C (*these instructions are designed for The Inspiralizer, but feel free to improvise and use whatever type that you own) and put them in a large bowl. Slice the onion halfway through lengthwise, being careful not to pierce through the center. Spiralize the onion with Blade A and add half the onion noodles to the bowl. (Save the rest for another use.) Add the artichokes, olives, chickpeas, feta (if using), spinach, and tomatoes to the bowl.
- Pour the dressing over the salad and toss well to combine. Serve or refrigerate until ready to serve.

SUMMER PASTA SALAD WITH ZUCCHINI RECIPE | GLUTEN-FREE
From sweetcayenne.com
Estimated Reading Time 7 mins
- Put a large stockpot of water on to boil for the pasta. While the water comes to a boil, cut the zucchini into 2-inch long strips, about ¼-inch thick. Chop your basil and dill, and grate your Parmesan (this is also a good time to lightly toast your chickpea breadcrumbs if you have made them ahead. Just use the large skillet to toast them, then reuse it to continue with this recipe).
- Cook the pasta noodles according to package directions, being sure to salt the pasta water thoroughly (it should be almost as salty as seawater). While the pasta is cooking, place a large skillet over medium heat. Add a drizzle of olive oil to the pan to coat the bottom of the pan. Add the zucchini and saute for about 2-4 minutes, until the zucchini is just slightly tender - it should still have a bit of crispness to it. Remove the pan from heat, then sprinkle on salt and pepper to taste.
- Drain the pasta, then add it to the still-warm zucchini in the skillet. Add the lemon zest and juice, chopped herbs, Parmesan, crushed red pepper, and about ½ cup of toasted chickpea breadcrumbs. Toss to combine. Serve warm, at room temperature, or chilled.
