This is a super healthy and simplified version of a family favorite.

1 tablespoon olive oil
1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
  • Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

This is an easy Italian meatloaf baked into hollowed-out zucchini halves. Delicious!

1 large zucchini, cut in half lengthwise
1 teaspoon garlic salt
¼ cup olive oil
1 onion, chopped
1 teaspoon minced garlic
1 ½ pounds ground beef sirloin
2 eggs
1 ½ cups Italian seasoned bread crumbs
1 tablespoon dried basil
¼ cup grated carrot
⅓ cup grated Parmesan cheese
1 (26.5 ounce) can spaghetti sauce, divided
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out and discard zucchini seeds, leaving the hollowed-out shells. Sprinkle the garlic salt into the hollowed-out zucchini, and set aside. Heat olive oil in a skillet over medium heat, and cook the onion and garlic until the onion is translucent, about 5 minutes. Remove from heat and allow to cool.
  • In a mixing bowl, mix the ground beef, eggs, bread crumbs, basil, carrot, and Parmesan cheese together with the onion mixture. Stuff the zucchini halves with the meat mixture, and place them into a baking dish. Spoon about half the spaghetti sauce over the zucchini, covering all the meat and allowing sauce to drip down the sides of the zucchini boats.
  • Bake in the preheated oven until the meat is no longer pink in the center and the zucchini are tender, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Sprinkle the mozzarella cheese over the zucchini, and return to oven until the cheese melts, about 5 more minutes. Heat the remaining spaghetti sauce in a small saucepan over medium heat while the zucchini boats are cooking. Serve the zucchini boats with the additional sauce on the side.

1 1/2 lbs ground beef (85% or 90% lean)
2/3 cup oat flour (old fashioned oats ground into a flour)
1 egg
1/2 cup shredded, packed zucchini (water squeezed out)
1/2 cup shredded carrots
1/2 cup chopped yellow onion
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon ground sage
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon pepper
2/3 cup barbecue sauce

Steps:

  • Preheat oven to 350F. In a large mixing bowl, combine all ingredients except barbecue sauce. Use your hands to mix and evenly disperse ingredients, but do not over-mix. If the mixture is too dry, add in a tablespoon of milk at a time until the mixture is moist but still able to hold its shape.
  • Place mixture evenly into a loaf pan.
  • Bake for 20 minutes, remove, and top with barbecue sauce. Return to oven and bake for 30 additional minutes. Allow to sit for 10 minutes before serving.

  • Put oven rack in middle position and preheat oven to 350°F.

1 1/2 cups finely chopped button mushrooms
1 cup dried breadcrumbs
1 cup shredded provolone
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, mushrooms, breadcrumbs, provolone, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more.
