EASY ZUCCHINI AND MUSHROOM SALAD



Easy Zucchini and Mushroom Salad image

6 whole mushrooms (cleaned and quartered, I used cremini)
1 small zucchini (cut lengthwise into eighths)
1/4 small onion (sliced thin)
1 poblano (seeded and cut into strips)
2 ounces feta (or cotija cheese)
1 avocado (removed from skin and sliced)
juice 1 lime
2 tablespoons extra-virgin olive oil
2 hearts romaine (cleaned and chopped)
salt and pepper

Steps:

  • Get all of your vegetables prepped and ready to go. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat, add the mushrooms, peppers, and onions, saute for 3 minutes. Add the zucchini and saute for another 3-5 minutes letting the vegetables get a little brown but take care not to burn. Season them with salt and pepper and reserve.
  • Toss the lettuce with the remaining oil and lime juice and season with salt and pepper. Divide the lettuce between the plates and add split the feta and avocado between them. Top with the warm veggies and enjoy!

2 medium zucchini
8 ounces fresh mushrooms, quartered
1 medium onion, sliced
olive oil
2 garlic cloves, crushed
1/2 teaspoon oregano
salt and pepper

Steps:

  • Cut zucchini in half and then into 1 inch pieces.
  • Heat enough olive oil to saute in a heavy skillet over medium high heat.
  • Add zucchini, mushrooms, onion and garlic.
  • Stir-fry until the zucchini and mushrooms are just tender and the onion is tender/crisp (about 8 minutes).
  • Stir in oregano and salt and pepper to taste.

2 zucchini, halved lengthwise and sliced
1 clove garlic, minced
1 (14.5 ounce) can fire roasted chopped tomatoes (such as Hunts®)
¼ cup crumbled blue cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Place the zucchini and garlic in the skillet, cover. Cook until zucchini is just tender, about 5 minutes. Stir in tomatoes; heat until warmed through. Remove from heat; sprinkle immediately with blue cheese. Cover, and allow cheese to soften before serving.
