Steps:
- Cut zucchini crosswise into 1-inch-thick slices. In a large saucepan cover potatoes with salted cold water by 2 inches and simmer, covered, until tender, about 35 minutes. Transfer potatoes to a colander and reserve cooking water. When potatoes are cool enough to handle, peel and put in a large bowl. Add lemon thyme, butter, and salt and pepper to taste and with a potato masher coarsely mash. Keep mash warm, covered.
- Bring cooking water to a boil and simmer zucchini until tender, about 8 minutes. Drain zucchini well in colander and coarsely mash into potatoes. Mash may be made 1 day ahead and cooled completely before being chilled, covered. Reheat mash before serving.

Steps:
- Cut the zucchinis in 1-inch chunks, put them in a pot, cover with water and boil over medium heat.
- Once the zucchinis are very tender (around 15 min), drain them and put them back in the pot. Return the pot to the heat and start mashing them (you can do that with a fork or a potato masher), some water will get out of them, boil them for few minutes until the water evaporates.
- Add the rest of the ingredients and stir.
- You can be creative and add other flavorings such as garlic or other spices.

- Cook bell pepper in oil and 1 tablespoon butter in a wide 4-quart heavy pot over moderately low heat, stirring occasionally, until softened, 4 to 6 minutes. Add garlic and cook, stirring, 1 minute. Add zucchini, water, salt, and pepper and bring to a boil over moderately high heat, then cook at a brisk simmer, covered, 6 minutes. Remove lid and simmer until most of liquid is evaporated and zucchini is soft, about 6 minutes.
- Coarsely mash zucchini with a potato masher and add scallion greens and remaining tablespoon butter, stirring, until butter is incorporated.

- To make zucchini mash, first combine the flours in a large bowl. Peel the zucchini using a vegetable peeler. Gather up the ribbons of zucchini skins in a blender with 1/5 cup water and a few sprigs of marjoram. Dissolve the yeast and the cane sugar in 1 1/2 cups water at room temperature. Add the zucchini skin mixture and combine well.
- Incorporate the zucchini liquid into the bowl with the flours using a wooden spoon, then add 2 tsp salt and mix a little longer to combine. Cover the bowl with a damp towel and set aside to rise at room temperature for 30 minutes. Cut the peeled zucchinis into small but irregular pieces along with half of the leek. Brown these in a pan with a drizzle of oil, salt, pepper, and a few marjoram leaves for 6-8 minutes.
- Knead the dough with your hands until smooth and soft, then form into a ball, return to the bowl, drizzle with a touch of oil, cover with the towel again and leave to rise for 30 minutes. Knead a second time, then let rise a further 20 minutes. Rinse the squash flowers, cut into strips, and combine with the cooked zucchini.
- Divide the dough in two, then stretch out both halves with your hands to produce two 12”x16” rectangles. Lay one out on a baking sheet, scatter with the vegetable mixture, season with salt, pepper, and a few marjoram leaves, then cover with the second piece of dough. Bake for 10 minutes at 450°F on the middle shelf of the oven, then move to the bottom of the oven for a further 10 minutes. Remove and let cool before serving.
