This easy and great way to use zucchini was given to me by my Grandmother many years ago and is still requested by friends and family today. Any flavor gelatin will work, but I have found apricot and strawberry to work best.

ZUCCHINI BREAD JAM

Zucchini Bread Jam image

This unusual jam recipe has the flavor of classic Zucchini Bread, but in the form of a spreadable jam. You'll love this fun way to preserve the summer harvest. This recipe makes about 6 half pint jars.

Provided by Constance Smith - A Good Life Farm

Categories     Jelly and Jams

Time P1DT55m

Number Of Ingredients 8

4 cups finely shredded zucchini
1 c apple juice
3 ounces powdered pectin (1 pouch)
1/3 c raisins
1 Tb bottled lemon juice
1 tsp ground cinnamon
1/2 tsp ground nutmeg
3 c sugar

Steps:

  • To begin, combine the shredded zucchini, apple juice, pectin, raisins, lemon juice, cinnamon and nutmeg into a large pot. (I always use an 8 quart, stainless-steel stock pot. Enameled cast iron is also fine. You never want to use aluminum or other reactive metal. That includes the utensils as well.)
  • Stir the ingredients together and bring it to a rolling boil over medium high heat. A rolling boil is a boil that can not be stopped by vigorous stirring.
  • Add the sugar and again bring it to a rolling boil. Stir continually. Boil for 1 minute and remove it from the heat.
  • Ladle the jam into prepared half pint jars. Leave 1/4 inch of head space.
  • Remove air bubbles, wipe the rims, and add the lids and rings.
  • Place the jars in your hot water bath or steam canner, and process for 15 minutes. (Adjust for elevation.)
  • When they are done processing, turn off the heat, and remove the lid to the canner and allow the jars to sit for 5 minutes.
  • Carefully remove the jars to a surface that is lined with towels, or a cooling rack - in a place that is draft-free. Leave the jars, undisturbed for 12-24 hours.
  • Remove the rings and test the seals.
  • Label and store in your pantry.

HOT AS HELL HABANERO ZUCCHINI JELLY

Hot As Hell Habanero Zucchini Jelly image

Talk about a face mask! This will melt your face off! Dare you try I hope you have a stomach of steel. My husband has been asking for a very hot jelly. My other jelly recipes are not hot enough for him. He asked for it and he got it. He loves it. I don't know who else would try it. Maybe Mean Chef? I don't know it's really really hot. The zucchini is in there because of the abundance in the garden and it makes a great filler. Now you can use this as a ingredient in BBQ sauces or glazes for chicken or pork. Spread it on cream cheese and serve with crackers. Add a touch to a salad dressing for a kick. It's really endless just use it as a seasoning. A good gift for those that can handle it!
