AIR FRYER ZUCCHINI FRIES RECIPE
Air Fryer Zucchini Fries with Lemon Tarragon Aioli are perfect for snacking. Strips of zucchini, coated in panko cook up perfectly crispy in the air fryer. Dip them in an easy-to-prepare creamy aioli flavored with tarragon and lemon.

Steps:
- Cut the zucchini into sticks no more than 1/2 inch thick and 3 inches long.
- Add the flour to a shallow bowl. In a separate shallow bowl whisk the egg and season with salt and pepper. In a third shallow bowl, combine the panko, bread crumbs, parmesan cheese and olive oil.
- Dredge zucchini in flour, then eggs, then Panko mixture.
- Heat air fryer to 400 degrees.
- Working in batches, place the zucchini fries in a single layer in the air fryer. Cook for 8-10 minutes, until crispy. Season with kosher salt while warm.
- While the fries cooking, prepare the aioli.
- Combine egg, garlic, and lemon juice in a blender or food processor. With the motor running, slowly drizzle in the canola oil until emulsified.
- Fold in the tarragon leaves and lemon zest and season with salt and pepper, to taste.

- Puree the mayonnaise and fresh basil and set aside.
- Mix breadcrumbs, Stella Parmesan cheese, lemon zest, salt and pepper in a shallow bowl.
- Dredge the zucchini slices in flour, dip in egg, and coat in the breadcrumb mixture.
- Fry the coated zucchini slices in oil until lightly golden brown, about 2-3 minutes per side. Or, place them on a wire rack on a baking pan, sprayed lightly with oil, and bake in a preheated 425 degrees F (220 degrees C) oven until lightly golden brown, about 15-20 minutes.
- Serve zucchini chips with the basil aioli.

- Heat oven to 450ºF.
- Cut zucchini crosswise in half, then cut each piece into 1/4-inch-thick matchlike sticks. Add cheese to coating mix in shaker bag; shake gently to combine. Whisk egg in medium bowl until blended.
- Add zucchini, in batches, to egg; toss until evenly coated. Use tongs to add 1/4 of the zucchini to coating mixture in shaker bag; close bag, then shake to evenly coat zucchini. Spread onto rimmed baking sheet sprayed with cooking spray. Repeat with remaining zucchini.
- Bake 12 to 13 min. or until zucchini is golden brown, turning after 7 min. Meanwhile, mix remaining ingredients until blended.
- Serve zucchini sticks with mayo mixture.
