CARAMEL-FROSTED ZUCCHINI BARS
What a delicious way to use up all that summer zucchini! The caramel frosting on these moist bars add so much to this recipe. My frosting set up fast, so I spread and frosted at the same time. You can cut your bars small or large size, I liked mine smaller. My kids really liked this, but I never mention they had zucchini in them! (hehe)!

Steps:
- Cream 3/4 cup softened margarine, 1 cup brown sugar, sugar, vanilla and eggs in bowl.
- Sift in next 6 dry ingredients, mixing well.
- Fold in zucchini, chocolate chips and walnuts in that order.
- Spread in greased and floured 10x15-inch baking pan.
- Bake at 375° for 20 to 25 minutes.
- Bring 1/2 cup melted margarine, 1 cup brown sugar and milk to a boil in saucepan.
- Boil for 3 minutes.
- Stir in confectioners' sugar.
- Spread over cake; cut into bars.
- Enjoy!

Here's another baking classic that belongs in everyone's recipe box. A clove-scented homemade frosting makes a good thing even better!

Steps:
- Heat oven to 350°F. Grease bottom and sides of 9- or 8-inch square pan. In large bowl, mix brown sugar, butter, vanilla and egg. Stir in flour, baking soda, cinnamon and 1/2 teaspoon cloves. Stir in zucchini and nuts. Spread in pan.
- Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- In medium bowl, mix all frosting ingredients until smooth and spreadable. Spread frosting over bars. For bars, cut into 6 rows by 4 rows.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture. Mix in the zucchini. Spread the batter evenly into the prepared pan.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
- To make the frosting, blend together the margarine, cream cheese and confectioners' sugar until smooth. Spread over warm cake. Allow cake to cool completely before cutting into bars.

- In a medium size bowl, combine the cake mix, egg, melted butter and zucchini. Mix until combined. The batter will be very thick. Press the mixture into the prepared pan and bake for 20-23 minutes, until a toothpick inserted in the center comes out clean. Allow the bars to cool.
- In a small bowl, microwave the Kraft caramels and sweetened condensed milk in 15 second intervals, mixing inbetween times. Do this until the caramels are melted. Drizzle the caramel on top of the frosting. Sprinkle the top of the bars with the chopped walnuts. Cut into squares and serve.

- For the Zucchini Bars: In a large bowl, beat together brown sugar, butter, eggs and vanilla. Stir in flour, baking soda, salt, cinnamon and cloves. Fold in zucchini and nuts, if using. Spread batter into the prepared baking pan. Bake for about 25-30 minutes, until the bars have browned on top and a toothpick inserted in the center comes out clean. Cool completely before frosting.
- For the Caramel Frosting: Combine butter, cream, brown sugar and salt in a medium saucepan. Stir over medium-high heat until mixture begins to boil. Boil and stir for 2-3 minutes. Remove from heat and allow mixture to cool for 5 minutes. Add sifted powdered sugar and vanilla and whisk to combine. Immediately pour over cooled bars and spread evenly. Sprinkle with toasted chopped pecans if desired. If frosting becomes too thick to pour, stir in 1 teaspoon of water and gently reheat.
- Caramel Frosted Zucchini Bars can be stored at room temperature for up to three days or refrigerated for up to five days. If frosted with Cream Cheese Frosting, bars must be kept in the refrigerator.
