ZUCCHINI BABY FOOD
Simple zucchini puree for one of your baby's first foods. The rule of thumb is to give your baby a new food for 2 to 3 days before introducing another to rule out any potential allergies. Once you've given zucchini for 2 to 3 days, you can combine it with another vegetable you've already introduced, such as carrot.

Steps:
- Place zucchini in a saucepan and cover with water. Bring to a boil and cook until very soft, 5 to 10 minutes. Drain well.
- Transfer zucchini to a blender or food processor; puree until smooth. Allow to cool before serving.

ZUCCHINI AND FENNEL BABY FOOD
Introducing different flavors and textures to your baby is so important, and I found this combination of fennel and zucchini was one of my daughter's favorites. The fennel is naturally sweet and full of flavor and cooking in olive oil first not only deepens flavor, but the added fat helps baby absorb all of the nutrients from the vegetables!

Steps:
- Combine olive oil, fennel, and zucchini in a small saucepan over medium heat. Cook and stir until vegetables are softened and have taken some color, about 10 minutes.
- Pour in water and stir well. Bring to a boil, cover, and reduce heat. Simmer 5 minutes, or until vegetables are soft and fully cooked. Add more water only if mixture is too dry.
- Remove from heat and let cool slightly. Blend to your desired consistency; for smaller babies, blend until completely smooth.

ZUCCHINI + POTATO BABY FOOD PUREE
Steps:
- Bring 2 inches of water to a boil in a medium saucepan over medium heat. Place the potato into a steamer basket over the boiling water, cover and cook for 10 minutes.
- Add in the zucchini on top of the potatoes, cover and cook for another 7 minutes or until potatoes and zucchini are tender. Do not over cook the potatoes. Reserve steamer water. Let cool slightly.
- Place the zucchini and potato into a blender or food processor and puree for 1 minute or until completely smooth, adding the reserved steamer water into the puree in 1 tablespoon increments if needed.
WHOLE BABY ZUCCHINI
Thanks to all the wonderful 'Zaar friends that helped me find a wonderful spring or early summer dish. This would be a great side dish, but I ate it as a whole meal. Yummy!

Steps:
- Clean ends off zucchini and rinse well.
- Place oil and baby zucchini in pan over medium-low heat. Cover and let cook for 7 minutes, stirring occasionally.
- Take off heat and sprinkle with parmesan cheese and chives. Toss to coat.
- Use salt and pepper to taste and enjoy.
