Wonderful appetizer and can even be used as a side dish to your favorite meal. A good way to use up all those zucchini in the garden when the summer get underway! Got this from a neighborhood cookbook.

Number Of Ingredients 12

4 cups zucchini, thinly sliced
2 medium onions, finely chopped
1/2 cup butter or 1/2 cup margarine
1/2 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 teaspoons dry basil or 3 tablespoons fresh basil
1 teaspoon dry oregano
2 eggs
2 cups shredded mozzarella cheese
1/4 cup romano cheese (optional)
1 (9 inch) pie shells

Steps:

  • Combine all the ingredients in a pan, except the egg and cheese.
  • Sauté the ingredients approximately 10 minute.
  • until tender and liquid has evaporated.
  • Do not let zucchini become too soft.
  • Beat the eggs and mix with the Mozzarella cheese, Romano cheese, and zucchini mixture.
  • Spread in the shell and sprinkle with some Mozzarella cheese on top.
  • Bake in preheated oven 350°F for about 30 minutes until cooked.
  • Serve warm or cooled.
  • Slightly warm is best.

1 cup Bisquick
1/2 cup parmesan cheese, grated
1/2 cup onion, finely chopped
2 tablespoons parsley, chopped
1/2 teaspoon salt
1/2 teaspoon season salt
1/2 teaspoon oregano
1 dash pepper
1 garlic clove, finely chopped (or 1/2 tsp garlic powder)
1/2 cup vegetable oil
4 eggs, slightly beaten

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients together.
  • Pour into greased pan OR 18 greased cupcake pan.
  • Bake until golden brown (1 hour for pan, 35 minutes for cupcakes).

1 cup all-purpose baking mix
½ cup chopped onion
½ teaspoon salt
4 eggs, beaten
½ cup shredded Cheddar cheese
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, mix zucchini, all-purpose baking mix, onion, salt, eggs, Cheddar cheese, vegetable oil and garlic.
  • Spread zucchini mixture into the prepared baking dish. Bake in the preheated oven 25 minutes, or until bubbly and lightly browned. Cut into bite-sized pieces to serve.

This recipe is both easy and tasty. Be sure to use freshly grated Parmesan cheese, and not the kind that comes in a can. It will make all the difference! Serve at room temperature. (Note: 1 tablespoon of dried basil may be substituted for the fresh that is called for.)

3 pounds zucchini, cubed
5 tablespoons unsalted butter, divided
1 large onion, chopped
4 garlic cloves, minced
2 eggs, beaten
½ cup freshly grated Parmesan cheese
½ cup fresh white bread crumbs
¼ cup chopped fresh basil leaves, packed
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place zucchini in a pot with about 1 inch of water. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain zucchini and transfer to a large bowl. Mash with a fork, then transfer to a fine mesh strainer or sieve, pressing to release excess water. Return to mixing bowl.
  • Melt 4 tablespoons butter in a large skillet over medium-high heat. Add onion and garlic, and cook until lightly browned being careful not to burn the garlic. Remove from heat, stir into the zucchini. Mix in the eggs, Parmesan cheese, bread crumbs, and basil. Season with salt and pepper.
  • Butter an 8 inch square baking dish with remaining butter. Pour the zucchini mixture into the dish, and spread evenly. Bake in the preheated oven until firm in the center and lightly browned on top, about 45 minutes. Allow to cool, cut into squares, and serve.

  • Cut zucchini into 3/4-in. slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact. 1 c bisquick baking mix
1/2 c finely chopped onion

1/2 c vegetable oil
