2 eggs, slightly beaten
2 cups shredded zucchini (1 large or 2 small)
1/3 cup Progresso™ plain bread crumbs
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
1 1/2 lb lean (at least 80%) ground beef
1 tablespoon packed brown sugar
2 tablespoons ketchup
1/2 teaspoon yellow mustard

Steps:

  • Heat oven to 350°F. In large bowl, mix all meatloaf ingredients until well blended. Press mixture into ungreased 9 1/2-inch deep-dish glass pie plate. Bake 35 minutes.
  • Meanwhile, in small bowl, mix all topping ingredients.
  • Remove meatloaf from oven; pour off drippings. Spread topping over loaf. Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center and meat thermometer reads 160°F. Let stand 5 minutes before serving.

2 large zucchinis, halved lengthwise
1 ½ pounds ground beef
1 (10.75 ounce) can condensed tomato soup
½ (10.75 ounce) can water
1 small yellow bell pepper, chopped
½ cup dry bread crumbs
1 egg
1 tablespoon Italian seasoning
½ teaspoon garlic powder
1 cup shredded Italian cheese blend, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Scoop seeds and flesh from zucchini halves with spoon, leaving hollowed-out shells. Discard about half the flesh. Put remaining flesh in a large bowl.
  • Mix ground beef, tomato soup, water, bell pepper, bread crumbs, egg, Italian seasoning, and garlic powder with the zucchini flesh; spoon into the zucchini shells. Arrange stuffed zucchini onto the prepared baking sheet.
  • Bake in preheated oven for 25 minutes. Sprinkle Italian cheese blend over the zucchinis and continue baking until the cheese is melted and bubbly, about 10 minutes more.

This recipe was inspired by summer produce and a fridge clean out. The combination of ground sirloin and sweet Italian sausages is delightful, while the cheese filled inside is just pure decadence. You probably won't have any left for sandwiches, so I recommend you make a double loaf.

1 medium zucchini
1 lb ground sirloin
2 sweet italian sausages uncased
1 large egg
2 Tbsp milk
3/4 tsp dried oregano
1 Tbsp dried minced onion
1/4 tsp ground black pepper
1/2 tsp kosher salt
1 Tbsp worcestershire sauce
1/4 c seasoned bread crumbs
2 slice mozzarella string cheese
2 slice velveeta cheese
your favorite marinara sauce for topping

Steps:

  • 1. Grate zucchini and place in a large bowl. I squeezed out some of the liquid, but wasn't really too concerned because I like my meatloaf juicy and moist.
  • 2. To the zucchini add the egg, milk, oregano, minced onion, salt, pepper, Worcestershire and bread crumbs. Mix well and add the sirloin and sausage. Combine meats with seasonings, but don't over mix, as the meat will get overworked and tough.
  • 3. Remove from the bowl and flatten your meat mixture to about 1 inch in height. Place your cheese in the middle of your rolled out loaf. You might want to add more cheese, but beware, if there's too much cheese inside it will find a way to seep out while it's cooking, and will just about disappear.
  • 4. Roll loaf back up to cover the cheese and place in a baking dish prepped with cooking spray. Top with your favorite marinara sauce and bake for 1 to 1-1/4 hours.
  • 5. Let sit for about 15 minutes and slice. And if you like to bring your lunch to work with you, a slice of this cheesy little zucchini-filled meatloaf makes a super sandwich. One minute in the microwave, a little extra sauce, and you're all set! Hope you enjoy:)

1/2 pound ground beef or bulk Italian sausage
1/4 cup chopped onion
1 garlic clove, minced
2/3 cup seasoned bread crumbs
1/3 cup milk
1/8 teaspoon dill weed
1 cup spaghetti sauce
1/2 cup shredded cheddar cheese

Steps:

  • Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp; set pulp and shells aside. , In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Add pulp, bread crumbs, milk and dill. Spoon into zucchini shells. , Place in a greased 2-qt. baking dish. Top with spaghetti sauce; sprinkle with cheese. Cover and bake at 325° for 30 minutes or until zucchini is tender.

Stuffed Zucchini with Meat, Italian style, nothing says Italian Summer Dinner Dish then this. A delicious meatball mixture stuffed inside a hollowed out Zucchini and then pan-fried or baked to perfection.

5 medium zucchini
2-3 tablespoons olive oil
1-2 pinches salt
3/4 cup water
2 slices bread (I use day old Italian if extra thick use 1 1/2 slices)
1/2 pound ground beef
1 large egg
1/4 cup freshly grated parmesan cheese
1/2-1 teaspoon parsley (or 1 tablespoon fresh)
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 -1 clove garlic minced

Steps:

  • If the zucchini is long, cut it in half, then hollow it out, rinse and set aside.
  • In a small bowl soak the bread for about 30 seconds in either water or milk. Remove the crust and squeeze out the excess moisture, crumble and place in a medium bowl, add the ground beef, egg, parmesan cheese, spices and garlic, and mix well.
  • Stuff the meatball mixture into the zucchini. In a medium to large frying pan add 2 tablespoons of oil and place the stuffed zucchini in the pan, sprinkle with a pinch or 2 of salt and extra spices if desired, drizzle with approximately 1 tablespoon of olive oil. Add the water, cover the pan slightly. Cook on low/medium heat until the zucchini is tender and water has evaporated. Raise the heat, and uncover and cook till zucchini is slightly browned, turn and brown the other side. Serve immediately. Enjoy!

1/2 cup panko breadcrumbs (can also use 2 slices of bread)
1/4 cup milk (dairy or non-dairy will work)
2 lbs ground turkey
2 eggs
2 teaspoons onion powder
2 teaspoons granulated garlic
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Italian seasoning
1 tablespoon Worcestershire sauce
1 cup crumbled feta cheese
2 cups shredded zucchini (water squeezed out)
1 cup marinara sauce (divided)

Steps:

  • Preheat the oven to 350 degrees.
  • Into a large mixing bowl, add the panko bread crumbs and milk. Mix until paste forms.
  • To the paste, add in the ground turkey, eggs, seasonings, Worcestershire sauce, feta cheese, zucchini, and 1/2 cup of marinara.
  • Using your hands, mix all of the ingredients until evenly distributed.
  • Spray a large baking sheet with cooking spray. Place the meatloaf mixture onto the baking sheet and form it into a loaf
  • Spread the remainder of the marinara sauce on top of the zucchini meatloaf.
  • Cook for 1 hour 15 minutes or until the internal temperature reaches 160 degrees.
  • Let sit for 5 minutes, cut into eight slices, and serve or store in the refrigerator or freezer.

This is an easy Italian meatloaf baked into hollowed-out zucchini halves. Delicious!

1 large zucchini, cut in half lengthwise
1 teaspoon garlic salt
¼ cup olive oil
1 onion, chopped
1 teaspoon minced garlic
1 ½ pounds ground beef sirloin
2 eggs
1 ½ cups Italian seasoned bread crumbs
1 tablespoon dried basil
¼ cup grated carrot
⅓ cup grated Parmesan cheese
1 (26.5 ounce) can spaghetti sauce, divided
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out and discard zucchini seeds, leaving the hollowed-out shells. Sprinkle the garlic salt into the hollowed-out zucchini, and set aside. Heat olive oil in a skillet over medium heat, and cook the onion and garlic until the onion is translucent, about 5 minutes. Remove from heat and allow to cool.
  • In a mixing bowl, mix the ground beef, eggs, bread crumbs, basil, carrot, and Parmesan cheese together with the onion mixture. Stuff the zucchini halves with the meat mixture, and place them into a baking dish. Spoon about half the spaghetti sauce over the zucchini, covering all the meat and allowing sauce to drip down the sides of the zucchini boats.
  • Bake in the preheated oven until the meat is no longer pink in the center and the zucchini are tender, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Sprinkle the mozzarella cheese over the zucchini, and return to oven until the cheese melts, about 5 more minutes. Heat the remaining spaghetti sauce in a small saucepan over medium heat while the zucchini boats are cooking. Serve the zucchini boats with the additional sauce on the side.
