FETTUCCINE GRATINATI AL PROSCIUTTO
Speciality of the restaurant Club del Doge at the Hotel Gritti Palace Venice and would normally use green tagliolini instead of fettuccine but fetuccine is more widely available.

Steps:
- Melt the 1 1/2 oz of butter and stir in the flour to make a roux. Stir and brown the flour butter mixture for 3 minutes.
- Gradually add the hot milk, stiring until thick and smooth then simmer for 10 minute.
- Cook the fettuccine in boiling, salted water until al dente.
- Meanwhile melt 3/4 of the 3 1/2 oz of butter remaining and cook the proscutto.
- Drain the pasta and stir in the proscutto and about half of the sauce. Season to taste.
- Transfer to a large shallow ovenproof pan and cover with the remaining sauce. Dot with the remaining butter then cover with the Parmesan Cheese.
- Broil the dish until cheese and sauce turn a golden brown. Serve at once.

- Preheat oven to 400ºF and spread butter in an 8x8-inch baking pan.
- In a large saucepan of boiling water cook zucchini until crisp-tender, about 5 minutes.
- Drain zucchini and cool until they can be handled.
- Trim ends of zucchini and quarter lengthwise to form spears.
- Wrap each zucchini spear in a slice of prosciutto and arrange side by side in pan. (Zucchini will be touching).
- Sprinkle zucchini with parmesan cheese and pepper and bake until lightly browned, 10 to 15 minutes.
- Serve zucchini warm.

Steps:
- The cheese selected here are of the best quality. It's your main ingredient of the sauce, try not to cheat. Parmesean/Romano cheese in a can does not melt at all, because of additives. Highly not recommended.
- Boil water for pasta, cooking until al-dente.
- Slice prosciutto into squares.
- Fine Dice Shallots.
- Grate Cheeses.
- Melt butter in a generous sized cooking pan (pan with sides) on low heat. Add shallots and cook till tender/translucent. Add salt and pepper to taste (remember there's alot of salt in these cheeses.) Add heavy cream, stirring constantly until the cream almost boils. Remove from heat. Add drained pasta into pan with cheeses. Stir until you've found decadence in a pan!
- Soon as I can I'll post a picture, but with green pasta, use a white or cream colored serving dish and garnish with parsley and a few ribbons of parmasean cheese! Bon appetito! (cooking time depends really on your pasta choice).
- Variations:.
- For example, skip proscuitto and cook shrimp in sauce before adding pasta and cheese. OMG! Add cooked diced chicken breast. Try pancetta or bacon instead of prosciutto. Use with tortellini? Add Mozarella cheese on top of individual servings and bake it under a 450* pre-heated oven for 10-15 min until mozarella is melted and just starting to brown.

- Combine shrimp, wine, olive oil, garlic and crushed pepper in bowl; toss to coat. Let stand at room temperature 1 hour.
- Preheat broiler. Drain shrimp, reserving marinade.
- Wrap 1 prosciutto strip around each shrimp. Arrange 3 shrimp in each of 4 shallow broilerproof dishes, tucking ends of prosciutto strips under shrimp. Drizzle 1 tablespoon marinade over shrimp in each dish.

- Iniziate la preparazione della Pasta al forno con zucchine e prosciutto cotto dal condimento. Lavate le zucchine e con un coltello tagliateli a dadini di diverse grandezze. In seguito private la cipolla dello strato esterno e tritatela finemente con un coltello. Mettete sul fuoco una padella antiaderente, versate un filo di olio extravergine di oliva e fate scaldare. Versate la cipolla nel tegame e fate soffriggere per qualche minuto. In seguito aggiungete anche le zucchine che avete preparato in precedenza. Salate, coprite con un coperchio e cuocete a fuoco basso per circa 10 minuti.
- Mettete sul fuoco una pentola con dell'acqua per la cottura della pasta. Quando bolle, salate e versate la pasta. Continuate la cottura mescolando di tanto in tanto. Scolate le mezze maniche al dente visto che la cottura continuerà in forno. Versate la pasta in un recipiente insieme al condimento che avete preparato in precedenza. Aggiungete 2 cucchiai di parmigiano grattugiato e mescolate il tutto. Con un coltello tritate grossolanamente il prosciutto crudo e la mozzarella ed uniteli agli altri ingredienti. In ultimo aggiungete del prezzemolo fresco tritato finemente e date un altra mescolata.
- Trasferite la pasta condita in una teglia da forno unta con dell'olio extravergine di oliva. Spolverizzate con dell'altro parmigiano grattugiato ed infornate a 250°C per circa 20 - 25 minuti. Passato il tempo di cottura, sfornate e servite la Pasta al forno con zucchine e prosciutto cotto ai vostri commensali

- Lavare bene le zucchine, eliminare le estremità e affettarle nello spessore di mezzo centimetro circa. Se utilizzate una mandolina da verdure verranno perfette.
- Mettere in una ciotola il Parmigiano, il pangrattato, l'origano, il sale e una generosa macinata di pepe. Mescolare bene per far amalgamare gli ingredienti.
- Mettere su una teglia un foglio di carta da forno e ungerlo con parte dell'olio da cospargere molto bene con un pennello da cucina.
