COPYCAT ZUPPA TOSCANA

We were so smitten with Olive Garden's most popular soup, we decided to crack the code so that we could make it ourselves on those days that we just can't get there.

Yield 12 cups

Number Of Ingredients 11

4 strips thick-cut bacon, cut into 1/2-inch pieces
1 pound sweet Italian sausage, casings removed
4 to 5 large russet potatoes (about 2 1/2 pounds), unpeeled and cut into 1/2-inch cubes
3 cloves garlic, minced
1 large white onion, diced
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 cups chicken broth
6 cups curly kale, stems removed and leaves roughly chopped
3/4 cup heavy cream
1 teaspoon white wine vinegar

Steps:

  • Cook the bacon in a large Dutch oven over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Transfer to a paper towel-lined plate with a slotted spoon; set aside to drain. Add the Italian sausage to the drippings and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6 minutes. Transfer to the paper towel-lined plate to drain.
  • Add the potatoes, garlic and onion to the drippings and cook, stirring occasionally, until slightly softened, 6 to 8 minutes. Season with the crushed red pepper flakes and salt and pepper. Add the chicken broth, increase the heat to high and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are tender and cooked through, 12 to 15 minutes.
  • Add the kale, heavy cream, bacon and sausage and cook over medium heat until the kale is tender, another 5 minutes. Stir in the vinegar just before serving.

1 cucumber (de-seeded and diced)
1 green pepper (de-seeded and diced)
2 jalapeno peppers (de-seeded and diced)
3-4 celery stalks (diced)
½ cup scallions (diced)
½ cup red wine vinegar
1 lemon (zest and juice)
1 ½ tbsp. green Tabasco
½ tbsp. extra virgin olive oil
1 tbsp. fresh dill
1 tbsp. fresh cilantro
½ tbsp. sugar
½ tsp. black pepper

Steps:

  • Stir all ingredients in a large bowl. Refrigerate 4 hours. Serve cold.

  • Add bacon and cook until crispy --according to package instructions. Remove from pan and set aside. Once bacon is cool enough to touch, crumble or cut into bite-size pieces.
  • Add potatoes, chicken broth, and pepper to the pot and bring to a boil. Once it comes to a boil, reduce to medium-low heat. Stir in sausage mixture. Cook for 15 minutes or until potatoes are tender. Add finely diced kale and continue to cook for 5-10 more minutes.

  • Meanwhile, heat a large pot or dutch oven over medium high heat. Spray with nonstick cooking spray and add ground beef, 1 tsp salt and 1/2 tsp pepper and cook & crumble until no longer pink, about 6-7 minutes.
  • Add peppers, onions and garlic and sauté until slightly softened, about 4 minutes. Add beef broth, vegetable broth, crushed tomatoes, tomato paste, Worcestershire sauce, Italian seasoning, and remaining 1/2 tsp pepper. Stir well and bring to a boil. Reduce to a simmer, cover and cook for 30 minutes.
  • Stir in cooked brown rice and add more salt & pepper to taste (I typically add about 1 more tsp of kosher salt at this point, but the amount needed can vary depending on how salty your broths are). Ladle into bowls and enjoy!

Sprinkle the flour over the vegetables and stir over low heat for 1 minute, or until the flour is fully incorporated. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil. Cover partially and cook the soup over moderate heat, stirring occasionally, until the vegetables are tender, 15 minutes.
  • Transfer half of the soup to a blender and puree until smooth. Return the puree to the saucepan, add the heavy cream and cook until the soup is just heated through. Season the soup with salt and white pepper and swirl in the remaining 2 tablespoons of butter. Ladle the soup into bowls, garnish with croutons and serve.

Add potatoes to the soup mixture, cook for about 15 minutes. Then add ground beef, cheese, dry mustard, and Worcestershire sauce and stir until well blended, and the soup is heated through. While the soup is heating, cut a hamburger bun into 1/2 inch cubes.
  • Toast the bread cubes in a small skillet with 2 teaspoons of butter until they have browned. Stir occasionally, so the bread does not burn. Serve the soup by pouring into bowls and garnishing with toasted hamburger buns, dill pickle relish, crumbed bacon, green onions, and sprinkling with some additional grated cheese.
