- Cook ziti according to package directions. Meanwhile, in a large nonstick skillet, melt butter. Stir in the flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheeses until melted., Drain ziti; add to sauce and stir to coat. Transfer to a shallow 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 20 minutes., In a small bowl, combine bread crumbs and butter; stir in cheeses. Sprinkle over ziti. Bake, uncovered, for 5-10 minutes or until heated through and topping is lightly browned.

- Heat oven to 350°F. Cook and drain pasta as directed on package.
- While pasta is cooking, melt butter in 3-quart saucepan over low heat. Cook garlic in butter 30 seconds, stirring frequently. Stir in flour and salt. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in mustard and Colby cheese. Cook, stirring occasionally, until cheese is melted.
- Stir pasta and ham into cheese sauce. Pour into ungreased 2-quart casserole. Sprinkle with Parmesan cheese. Bake uncovered 20 to 25 minutes or until bubbly.

BAKED ZITI WITH FOUR CHEESES
I love macaroni and cheese. This version is terrific, with a crusty-cheesy layer on top and creamy-cheesy baked pasta in the middle.

Steps:
- Melt butter over moderately-low heat, stir in flour and cook 3 minutes.
- Remove from heat and whisk in hot milk.
- Return pan to heat, bring to a boil, whisking, for 10 minutes.
- Remove from heat and stir in nutmeg, ¾ tsp of salt and ¼ tsp of pepper.
- In a small bowl, combine 1 cup of the Gruyere, ½ cup of the Fontina and ½ cup of the Parmesan; whisk cheese into the sauce, ½ cup at a time, until cheese is melted.
- Season to taste.
- Preheat oven to 390 degrees F.
- Boil ziti until al dente.
- Drain well and turn into a buttered 13 x 9 x 2 inch pyrex baking dish.
- Season with remaining ¼ tsp salt and ¼ tsp pepper.
- Pour sauce over and combine.
- Sprinkle remaining ½ cup Gruyere, ½ cup Parmesan, 1 ½ cups Fontina and all of the mozzarella.
- Bake for 20 minutes, or until pale golden-brown.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Combine 4 cups mozzarella, pasta sauce, ricotta, cream cheese, 2 tablespoons Parmesan, Italian seasoning, garlic powder, and salt in a large mixing bowl. Add cooked ziti and mix well to coat. Transfer to a 9x13-inch glass baking dish. Sprinkle remaining mozzarella and Parmesan over top, along with parsley. Cover with foil.
- Bake in the preheated oven until thoroughly heated and cheese on top is melted, 20 to 30 minutes.

- Preheat oven to 400°. Cook pasta according to package directions. Meanwhile, place cottage cheese in a food processor; cover and process until smooth. Set aside. , In a large saucepan, melt 1/2 cup butter. Stir in flour, salt, pepper and garlic salt until smooth. Gradually add cream and milk. Bring to a boil; cook and stir 2 minutes or until thickened. , Drain macaroni; transfer to a large bowl. Add cheddar cheese, cottage cheese, white sauce and 3/4 cup bacon; toss to coat. Transfer to a greased 13x9-in. baking dish. (Dish will be full.) Melt remaining butter. Add bread crumbs; toss to coat. Sprinkle over casserole. , Bake, uncovered, 20 minutes. ZITI-MAC & CHEESE
Steps:
- In large non stick saucepan, melt margarine or butter. Once melted where bottom of pot is nicely greased, add tomato soup and milk. Next if not with a spoon use a mixer on low and mix tomato soup to where creamy not lumpy. Let become hot but stir so not to stick. Once hot enough, add cheese slices in slowly a few at a time. After it has all melted, remove from heat immediately. To keep creamy just stir while waiting for noodles.
- Boil water in pasta pot. Add ziti noodles while water is at a boil... Cook about 12-15 min. Stir to keep from sticking... DO NOT ADD OIL OR SALT. It is not needed.
- Strain noodles, put into big pasta bowl. Add in the cheese sauce. Mix in with spoon. Then serve.
