ZIPPY TURKEY STOUP

Zippy Turkey Stoup image

No, that's not a typo. My DH calls my soups "stoup" because I make them THICK. My oldest son is down with a head cold and a sore throat and I didn't have time for my usual, homemade chicken and noodle soup so I whipped this up instead of the planned dinner he wouldn't have been able to eat. You don't have to have a head cold to enjoy this. You just need to be looking for a bowlful of meaty goodness and colorful veggies with a little extra zip. Note -- "vegetable juice cocktail" is V-8. But that isn't in the ingredient database so I can't say it.

Time 35m

Yield 12-14 serving(s)

Number Of Ingredients 14

2 lbs ground turkey
1 large onion
1 -2 cup chopped zucchini (1, 8-10-inch or 2, 6-inch squash)
1 -2 cup chopped yellow squash (1, 8-10-inch or 2, 6-inch squash)
2 (14 1/2 ounce) cans diced tomatoes
1 lb frozen spinach (optional)
2 small fresh jalapeno peppers, minced
2 garlic cloves, put through press
1 tablespoon parsley
2 teaspoons oregano
4 cups chicken stock
8 -12 ounces vegetable juice cocktail (optional) or 8 -12 ounces tomato juice (optional)
1 cup rice
olive oil

Steps:

  • In a large pot, brown the ground turkey and onions in a little olive oil.
  • Add all the other ingredients and bring to boil.
  • Simmer 15-20 minutes, until rice is soft and flavors are well blended.
  • Note: If you prefer a thinner, more brothy consistency add more chicken stock and taste to adjust seasonings.
  • Note: The jalapenos don't make this really hot -- just a little zippy. If even this is too much substitute the milder Anaheims or "Cubanelle"-type sweet peppers. If its not spicy enough for you go for whatever variety suits your taste.
  • Note -- I haven't frozen it, but it ought to freeze as well as any other soup.

TURKEY ZUPPA TOSCANA

Turkey Zuppa Toscana image

Got the idea after one Thanksgiving when we had so much turkey left over. One of my favorite soups is zuppa Toscana. So, I came up with this. It has been an after-Thanksgiving staple for my family for the past 7 years. Great recipe for the leftover turkey during the holidays. Nice and warming and a little light. Great for those cold nights. Serve garnished with shaved Parmesan cheese and Italian bread for dipping.

Time 1h15m

Yield 10

Number Of Ingredients 17

1 pound ground Italian sausage
½ cup unsalted butter
1 pound leftover cooked turkey, pulled
½ cup turkey drippings
3 tablespoons minced garlic
1 tablespoon ground thyme
1 tablespoon dried parsley
1 tablespoon mustard powder
2 teaspoons salt
1 teaspoon ground black pepper
3 cups water
3 russet baking potatoes, unpeeled and cubed
8 ounces white mushrooms, quartered
1 medium white onion, halved and sliced
8 ounces chopped kale
8 ounces sour cream
1 cup milk

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Set cooked sausage aside.
  • Melt butter in a Dutch oven over medium-high heat. Stir in turkey, drippings, garlic, thyme, parsley, mustard powder, salt, and pepper. Add water and bring to a boil, about 5 minutes. Stir in browned sausage, potatoes, mushrooms, and onion. Reduce temperature to medium-low and simmer until potatoes are tender, stirring soup every 10 minutes, for 30 to 45 minutes.
  • Stir kale into the soup and reduce temperature to low. Simmer until kale wilts, about 5 minutes.
  • Stir sour cream and milk into the soup, cover, and simmer 10 minutes more.

ZIPPY TURKEY ZOODLES
