Number Of Ingredients 15

3 tablespoons olive oil
3 tablespoons butter
1/4 to 1/2 teaspoon crushed red pepper flakes
3 large carrots, peeled and chopped
1 large onion, chopped
2 garlic cloves, minced
2 teaspoons dried basil
3 cans (28 ounces each) whole peeled tomatoes, undrained
1 container (32 ounces) chicken stock
2 tablespoons tomato paste
3 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 cup heavy whipping cream, optional
Fresh basil leaves, thinly sliced, optional

Steps:

  • In a 6-quart stockpot or Dutch oven, heat oil, butter and pepper flakes over medium heat until butter is melted. Add carrots and onion; cook, uncovered, over medium heat, stirring frequently, until vegetables are softened, 8-10 minutes. Add garlic and dried basil; cook and stir 1 minute longer. Stir in tomatoes, chicken stock, tomato paste, sugar, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer, uncovered, to let flavors blend, 20-25 minutes. , Remove pan from heat. Using a blender, puree soup in batches until smooth. If desired, slowly stir in heavy cream, stirring continuously to incorporate; return to stove to heat through. Top servings with fresh basil if desired.

3/4 pound sliced bacon, diced
1 medium onion, chopped
8 to 10 potatoes, peeled and cut into chunks
1 medium carrot, grated
5 cups water
1 can (12 ounces) evaporated milk
2 tablespoons butter
4-1/2 teaspoons minced fresh parsley
2 teaspoons Worcestershire sauce
1/2 teaspoon ground mustard
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet, cook bacon and onion; drain and set aside. In a soup kettle or Dutch oven, cook the potatoes and carrot in water for 20 minutes or until tender (do not drain). Stir in the remaining ingredients and the bacon mixture. Cook for 10 minutes or until heated through.

Possibly the easiest tomato soup you'll every make! And it's no slouch in the taste department, either, with a sweet smokiness from the roasted tomatoes and paprika. Perfect served with a dollop of sour cream or a grilled cheese sandwich. This is a very forgiving recipe, so feel free to spice it to your preferences or substitute for the ingredients you have on hand! I do suggest you use Muir Glen Fire Roasted Crushed Tomatoes because they give the soup a great depth of flavor and a hint of smokiness, but any brand crushed tomatoes would do in a pinch (just don't use diced tomatoes, or the soup will be watery).

2 (14 ounce) cans muir glen fire roasted crushed tomatoes, undrained
1/2 onion, diced
1 celery rib, diced
3 garlic cloves, minced
2 cups chicken stock (or water)
1 teaspoon smoked paprika (if your paprika is really spicy, you may want to omit cayenne)
1/2 teaspoon cayenne
1/2 teaspoon powdered rosemary (or 1 tsp. whole dried, or 1 T. fresh minced)
1 teaspoon dried marjoram
sour cream (to garnish) (optional)

Steps:

  • Spray a medium saucepan with a little olive oil. Saute onion, celery, and garlic till onion becomes translucent and celery is still bright green. Reduce heat to low; add crushed tomatoes, stock, paprika, cayenne, rosemary, and marjoram and simmer 15 minutes.
  • Puree soup (if desired) with an immersion blender. Serve with a dollop of sour cream (if desired).

1 leftover turkey carcass, broken into pieces
1 large onion, chopped
1 tablespoon chopped celery leaves, or to taste
2 bay leaves
1 tablespoon butter
28 baby carrots, quartered
3 stalks celery, chopped
2 (14.5 ounce) cans stewed tomatoes with juice
1 cup long-grain rice
10 green beans, cut into bite-size pieces
2 cubes chicken bouillon
1 tablespoon dried marjoram
1 teaspoon dried thyme
2 sprigs fresh rosemary
½ teaspoon ground ginger
½ teaspoon cayenne pepper
salt and ground black pepper to taste
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Place turkey carcass pieces into a large soup pot and cover with cold water. Stir in onion, celery leaves, and bay leaves, bring to a boil, and reduce heat to medium-low. Simmer for 2 hours. Strain broth and pour back into soup pot. Pick turkey meat from the carcass and chop meat into bite-size pieces.
  • Heat butter in a skillet; cook and stir carrots and celery until tender, about 8 minutes. Stir carrots, celery, stewed tomatoes with juice, rice, green beans, chicken bouillon cubes, marjoram, thyme, rosemary, ginger, cayenne pepper, salt, and black pepper into broth. Mix in chopped turkey meat.
  • Bring soup back to a boil, reduce heat to low, and simmer until rice is tender, 30 to 35 minutes. Remove and discard rosemary sprigs; stir corn into soup. Adjust salt, cayenne pepper, and black pepper to taste. Lay a paper towel on top of soup to absorb excess oil, if desired.

1 pound lean ground beef (90% lean)
1 medium onion, chopped
3 cups water
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 jar (7 ounces) roasted sweet red peppers, drained and chopped
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
1 tablespoon dried cilantro flakes
1/2 cup uncooked converted rice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain., Transfer to a 4- or 5-qt. slow cooker. Add the water, salsa, tomatoes, red peppers, chilies, taco seasoning and cilantro. Stir in rice. Cover and cook on low for 4-5 hours or until rice is tender.
