2 slices whole wheat bread
12 miniature pretzels
2 teaspoons Italian seasoning
2 teaspoons salt-free spicy seasoning blend
1/2 teaspoon pepper
2 large eggs, lightly beaten
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1/2 cup finely chopped onion
1/3 cup finely chopped green pepper
1 tablespoon finely chopped jalapeno pepper
2 garlic cloves, minced
2 tablespoons olive oil

Steps:

  • Place the first 5 ingredients in a blender or food processor; cover and process until mixture resembles fine crumbs. , In a bowl, combine the eggs, salmon, onion, green pepper, jalapeno, garlic and 1/2 cup crumb mixture. Shape into eight 1/2-in.-thick patties. Coat with remaining crumb mixture., In a large nonstick skillet over medium heat, cook patties in oil until golden brown, 4-5 minutes on each side.

A fail-safe recipe for a speedy fish supper - flaked salmon flavoured with parsley, dill and some secret ingredients

450g floury potatoes, cut into chunks
350g salmon (about 3 fillets)
2 tsp tomato ketchup
1 tsp English mustard
zest ½ lemon, plus wedges to serve
1 heaped tbsp chopped parsley
1 heaped tbsp chopped dill
3 tbsp plain flour
1 egg, beaten
100g dried breadcrumb
4 tbsp sunflower oil
salad, to serve

Steps:

  • Heat the grill.
  • Place 450g floury potatoes, cut into chunks, in a pan of water, bring to the boil, cover and cook for 12-15 mins until tender. Drain and leave to steam-dry, then mash.
  • Meanwhile, season 350g salmon fillet and grill for 5-6 mins until just cooked. Cool for a few mins, then break into large flakes.
  • Mix the potato, 2 tsp tomato ketchup, 1 tsp English mustard, the zest of ½ lemon, 1 heaped tbsp chopped parsley, 1 heaped tbsp chopped dill and some seasoning. Lightly mix in the salmon, taking care not to break it up too much.
  • Shape into 4 large fish cakes.
  • Put 3 tbsp plain flour, 1 beaten egg and 100g dried breadcrumbs in 3 shallow dishes. Dip the cakes into the flour, dust off any excess, then dip in the egg, and finally coat in breadcrumbs.
  • Heat 4 tbsp sunflower oil in a large pan. Fry the cakes over a medium-low heat for 3-4 mins each side until deep golden and heated through.
  • Serve with salad and lemon wedges.

2 tablespoons mayonnaise
2 teaspoons Dijon mustard

1/2 teaspoon dried thyme
1/2 cup chopped parsley
1/4 cup olive oil (for frying)

Steps:

  • Preheat your oven to the "keep warm" setting.
  • Drain the salmon cans thoroughly. Place the salmon in a large bowl. Flake it well with a fork into tiny pieces.
  • Add the eggs, mayonnaise, Dijon mustard, garlic, kosher salt, black pepper, and thyme. Mix well.
  • Mix in the chopped parsley.
  • Heat the olive oil over medium heat in a large 12-inch nonstick skillet, for about 3 minutes.
  • Using an ice cream scoop, transfer four mounds of the mixture to the skillet. Pack the mixture into the scoop, then release it into the skillet and gently flatten.
  • Cook until well-browned and crispy, about 3 minutes on each side. Place the cooked patties in the oven to keep warm while you cook the second batch.

1 (14.5 or 15-ounce) can pink salmon
1/3 cup finely chopped onion
1/3 cup mayonnaise
1 teaspoon Tony Chachere's, (or another cajun seasonilng like Old Bay)
1/2 teaspoon lemon zest
10 saltine crackers, (crushed)
salt and pepper
1 egg, (lightly beaten)
15 saltine crackers, (finely crushed)
2 tablespoons vegetable oil
1 tablespoon butter

Steps:

  • Drain salmon and remove any skin or pieces of bone. Place in a medium bowl.
  • Add mayonnaise, seasoning, lemon zest, and 10 crushed Saltine crackers to bowl. Stir well. Taste for seasoning and add desired amount of salt and pepper.
  • Mix in egg.
  • Place the remaining Saltine cracker crumbs on a plate.
  • Form salmon mixture into 6 patties. (If you can, refrigerate them for 30 minutes and they will hold together better.)
  • Heat vegetable oil and butter in a large pan.
  • Dredge both sides of salmon patties in cracker crumbs.
  • Place in pan and cook until golden on both sides.

  • Place a large nonstick skillet with metal oven-safe handle on a burner over medium high heat for 3-4 minutes until drops of water sizzle and bead on the surface when you sprinkle them.
  • When water dries pour 2 tbsp oil and swirl around the bottom of the pan to evenly coat. Oil will begin to smoke lightly after a moment or two. Place salmon fillet(s) gently into the skillet.
  • Turn the heat to high. Let the salmon sear for 2-3 minutes until a golden brown crust begins to form on the bottom of the fish. You'll be able to see the edge of the crust where the meat touches the pan.
