2 pounds lean ground beef (90% lean)
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped onion
2 cans (15 ounces each) pork and beans
1 can (10-3/4 ounces) reduced-sodium condensed tomato soup, undiluted
1/4 cup water
2 tablespoons cider vinegar
1 tablespoon brown sugar
1 teaspoon ground mustard

Steps:

  • In a nonstick skillet, cook the beef, celery, green pepper and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine the pork and beans, tomato soup, water, vinegar, brown sugar, mustard and beef mixture. , Transfer to a shallow 2-1/2-qt. baking dish coated with cooking spray. Bake, uncovered, at 375° for 40-50 minutes or until heated through and mixture reaches desired thickness.,

1-1/2 cups sliced fresh mushrooms
1 medium onion, chopped
1/2 cup water
1 teaspoon canola oil
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
3/4 cup uncooked long grain rice
2 teaspoons ground cumin
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 cup shredded part-skim mozzarella cheese, divided

Steps:

  • Preheat oven to 350°. In a large nonstick skillet, saute green peppers, mushrooms and onion in water and oil until onion is tender. Add garlic; cook 1 minute longer. Add tomatoes, beans, rice and seasonings. Bring to a boil. , Reduce heat; cover and simmer 25 minutes or until rice is tender and most of the liquid is absorbed. Remove from heat; stir in 1/2 cup cheese., Transfer to a 2-1/2-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, 15-20 minutes or until cheese is melted.

Steps:

  • Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
  • Stir in all the spices. Cook for a further minute or two.
  • Add the tomatoes, stock & S & P. Stir well.
  • Add the beans. Stir & bring to the boil. Stir in the mushrooms .
  • Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.
