"Feta cheese and olives give this salad such great flavor, you'd never guess it's as light as it is," declares Angela Leinenbach of Mechanicsville, Virginia. "It's a nice change of pace and goes with all kinds of main dishes."

2 cups torn red leaf lettuce
1 small tomato, cut into wedges
4 cucumber slices, halved
2 radishes, sliced
1 red onion slice, quartered
2 tablespoons sliced ripe olives
1 tablespoon crumbled feta cheese
DRESSING:
1 tablespoon red wine vinegar
2 teaspoons water
2 teaspoons olive oil
1 garlic clove, minced
1/4 teaspoon sugar
1/8 teaspoon salt
Dash pepper

Steps:

  • In a small bowl, combine the lettuce, tomato, cucumber, radishes, onion, olives and feta cheese. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.

Steps:

  • Cover platter with arugula; top with radishes, pears and onions.
  • Drizzle with dressing; top with cheese.

Looking for a recipe to use radishes from my garden, I came across this salad at a local restaurant. It's so good, I had to share.

2 cups sliced radishes
½ teaspoon salt
1 cup sliced red onion
1 cup seeded and sliced cucumber
½ cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon white sugar
1 clove garlic, minced
1 teaspoon chopped fresh dill

Steps:

  • Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.
  • Whisk olive oil, vinegar, sugar, garlic, and dill in a small bowl until well mixed; pour over vegetables and toss to combine. Cover and refrigerate for at least 1 hour before serving.

Fiery radishes add crunch to this zesty smoked salmon salad

Number Of Ingredients 7

2 oranges
1 tbsp red wine vinegar
½ small red onion , thinly sliced
200g bag radish , thinly sliced
200g smoked salmon
75g bag watercress
brown bread , to serve

Steps:

  • Segment the oranges over a salad bowl, allowing the segments and any juice to fall into the bowl. Stir in the vinegar, onion and radishes, add some seasoning and allow to stand for 5 mins.
  • Divide the smoked salmon between 4 plates. Toss the watercress through the radish mix, then put a handful on top of the salmon, making sure you have a bit of everything on each plate. Serve with any juices from the bowl poured over, and some brown bread if you like.
