ZESTY SPINACH MUSHROOM SALAD



Zesty Spinach Mushroom Salad image

With flavors of garlic and basil, this homemade dressing comes together in a snap and adds zest as a side to any main dish.

4 cups fresh baby spinach
1 cup sliced fresh mushrooms
3 tablespoons olive oil
1 tablespoon cider vinegar
1/2 teaspoon dried basil
1/2 teaspoon minced garlic
1/4 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
Dash crushed red pepper flakes

Steps:

  • In a salad bowl, combine spinach and mushrooms. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and toss to coat. Serve immediately.

This is not for fans of bland food! It's a bit spicy for me, but my BF loves it so I must be doing something right. It's (yet again) from the Famous Brand Names Cookbook.

1 cup vegetable oil
1/3 cup wine vinegar
1 tablespoon lemon juice
1 tablespoon chopped chives
1/2 teaspoon salt
1/4 teaspoon Tabasco sauce
1 small garlic clove, minced
6 cups torn iceberg lettuce
2 cups torn spinach leaves
1/4 lb mushroom, sliced
1/3 cup sliced pitted ripe olives

Steps:

  • In jar with tightly fitting lid combine oil, vinegar, lemon juice, chives, salt, Tabasco sauce and garlic; shake well.
  • In large bowl combine lettuce, spinach, mushrooms and olives. Add 3/4 cup dressing and toss lightly to mix well.
  • Refrigerate remaining dressing in jar for later use.

These mushrooms are the best! We like to serve them with steak, pasta, in omelettes, on hamburgers or just alone. The recipe I am posting makes alot so you might want to adjust for your needs. You can either slice, quarter or leave the mushrooms whole, whatever you prefer But they do freeze well. Enjoy!

6 (8 ounce) boxes button mushrooms, sliced (or quartered, or your choice of type)
2 (5/8 ounce) packages Good Seasonings Italian salad dressing mix (I use the Zesty type)
1 cup butter (do not use margarine)

Steps:

  • In large fry pan melt butter over medium heat add mushrooms and simmer until mushrooms are tender. Add packages of Zesty Italian Seasoning and let simmer until some of the moisture from the mushrooms has evaporated. Serve warm as desired!

1 small potato, cut into cubes
½ cup finely chopped cabbage
¼ cup fresh pomegranate seeds
½ carrot, cut into matchsticks
1 tablespoon extra-virgin olive oil
1 teaspoon lemon juice
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon brown sugar
¼ teaspoon red pepper flakes

Steps:

  • Place potato cubes into a small pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 5 to 10 minutes. Drain and let cool, about 10 minutes.
  • Combine cooled potato, cabbage, pomegranate seeds, and carrot in a large bowl.
  • Whisk olive oil, lemon juice, garlic, salt, brown sugar, and red pepper flakes in a small bowl until well-mixed. Poured over potato mixture and toss to combine.

These are such a crowd pleaser people can't believe they are so easy to make. The hardest part is waiting for them to be done so you can eat them.

1 lb white button mushrooms, stems removed
8 ounces kraft zesty Italian salad dressing

Steps:

  • Place mushroom caps in a gallon zip-loc bag with salad dressing. Marinate for at least 30 minutes.
  • Preheat grill medium high heat.
  • Remove from bag and place on vegetable grill tray (small holes so they won't fall through) or aluminum foil if you don't have a veggie grill pan. Close grill lid.
  • ***If you do not have a grill pan you can also thread 3 or 4 mushrooms (depending upon size)onto skewers and cook on the grill.***.
  • Grill 10 minutes or until bottom side is lightly browned and mushrooms are almost cooked.
  • Turn mushrooms and cook 5 more minutes.
  • You can baste with excess marinade if you wish at anytime during the cooking process.
  • These are very hot so "try" to let them cool a little before taking your first bite.
  • Enjoy!
  • (Preparation time includes marinating time).
