MEDITERRANAN-STYLE HOMEMADE SALSA RECIPE
Easy homemade salsa recipe with a Mediterranean twist! Fresh tomato salsa made with sweet cherry tomatoes, shallots, garlic and loads of fresh herbs. Olives and jalapeno are optional, but highly recommended. Great with pita chips as an appetizer, or use it as a topping on top of grilled steak, Mediterranean grilled chicken and more!

Steps:
- Place quartered cherry tomatoes, chopped shallots, minced garlic, chopped fresh herbs, chopped kalamata olives (if using), and chopped jalapeno (if using) in a mixing bowl.
- Season with kosher shalt, pepper, and sumac (start with a heaping 1/2 tsp sumac, add more late if needed). Toss gently.
- Add lemon juice and a generous drizzle of quality extra virgin olive oil (I used Early Harvest EVOO). Toss to combine. Set aside for a few minutes to let the flavors marry.
- Serve with pita chips or chips of your choice. Enjoy!

MEDITERRANEAN BURGERS WITH SPICY TOMATO SALSA

- Preheat a grill or barbecue to medium. (Alternatively, you can use a cast-iron, ridged grill pan on the stove for cooking the patties.) Place the minced beef, breadcrumbs, garlic, sun-dried tomatoes and coriander in a large bowl and use your hands to mix the ingredients together thoroughly.
- Divide the mixture equally into four and shape into patties, about 10 cm across and a similar size to the buns.
- Brush the grill rack or grill tray lightly with oil and cook the patties for 3-4 minutes on each side, until browned on the outside and cooked through.
- To make the salsa, mix together all the ingredients in a bowl. Season to taste. You can chop all the salsa ingredients together in the food processor to save time - just use the pulse button to get the right consistency.
- Split the buns in half and pop under the grill or onto the barbecue rack to toast lightly. Place a few rocket leaves on each base, top with a patty and add a spoonful of salsa, then replace the tops. Serve immediately.

- I use a small blender for this sauce. Start by cleaning jalapenos, chopping cilantro and mincing garlic. When chopping cilantro I remove any large stems but I'm not too picky, I just chop as fine as I can on a cutting board.
- Blend mayonnaise, lime juice, jalapenos and garlic first. Make sure it's a fine blend. It took me about a minute or two to get a very smooth consistency.
- Then add aji amarillo, huacatay, olive oil, salt and chopped cilantro. Continue blending until all the cilantro has been blended and there are no large pieces. If the sauce is too thick, add 2 tbsps of water, blend few more seconds and add to a serving bowl.
