2/3 cup packed brown sugar
2/3 cup cider vinegar
2/3 cup soy sauce
2/3 cup vegetable oil
4 teaspoons lemon juice
1 teaspoon garlic powder
2 pounds fresh asparagus, trimmed
1 cup chopped pecans, toasted

Steps:

  • In a saucepan, combine the brown sugar, vinegar, soy sauce, oil, lemon juice and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Refrigerate until cool. , Meanwhile, in a large skillet, bring 1/2 in. of water to a boil. Add asparagus. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain and rinse in cold water., Place asparagus in a large resealable plastic bag; add marinade. Seal bag and turn to coat; refrigerate for 2 hours or overnight, turning occasionally. Drain and discard marinade. Place asparagus on a serving plate; sprinkle with pecans.

2 tablespoons white wine vinegar

Steps:

  • Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.
  • Cut ends off asparagus.
  • Cook asparagus in a large pot of simmering water for 4 minutes.
  • Drain and put in an ice bath.
  • Remove asparagus to a platter and top with chopped tomato.
  • Pour vinaigrette on asparagus.

1 pound asparagus
1/3 cup extra virgin olive oil
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar (apple cider vinegar or red wine vinegar also work)
1 teaspoon honey (or agave syrup for a vegan version)
1/2 teaspoon kosher salt
Freshly ground black pepper to taste

Steps:

  • Snap or trim the tough ends of the asparagus and discard. Wash asparagus thoroughly.
  • Fill a large bowl with water and ice. Set aside.
  • Bring a large pot filled 3/4 of the way full with water to a full boil. Immerse asparagus and cook for about two minutes, until bright green.
  • Plunge asparagus in a large bowl of ice water to stop the cooking. Drain.
  • Lay asparagus in an 8 x 8 baking dish or container.
  • In a small bowl, whisk together the olive oil, lemon zest, lemon juice, white wine vinegar, honey, salt, and black pepper. Taste and adjust seasons if desired.
  • Pour vinaigrette over asparagus. Cover dish and refrigerate for 8 hours, or up to 24 hours.
  • Remove asparagus from marinade and serve.

2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon unsalted butter
1 tablespoon chulula chipoltle dry chili lime seasoning (use less if you're sensitive to heat)
1/8 teaspoon lime juice
salt

Steps:

  • Prepare asparagus by trimming ends to remove tough ends.
  • Place in a glass baking dish.
  • Melt the butter in a microwave proof bowl.
  • Add the vinegar, Worcestershire, chulula and lime juice and mix well to break up any dry ingredients.
  • Pour over the asparagus and toss.

2 large mason jars with lids
2 bundles of asparagus (ends trimmed and measured to fit the jars)
4 cloves garlic (cut into thirds)
2 very large handfuls of fresh dill
1 tbsp coriander seeds
1 tbsp whole peppercorns
1 tsp crushed red pepper flakes (to taste)
1 tbsp sugar
3 tbsp kosher salt
2 cups white vinegar
2 cups water

Steps:

  • Wash two large size mason jars and lids in hot soapy water, rinse and dry well.
  • Cut the woody ends off the asparagus spears, making sure they aren't taller than the jar.
  • Place two cloves of garlic, a large handful of fresh dill, half a tablespoon (1 ½ teaspoons) of coriander seeds, whole peppercorns, and 1/2 tsp crushed red pepper flakes into each jar.
  • In a small saucepan over medium-low heat, combine the sugar, kosher salt, and white vinegar together. Whisk vigorously until the sugar and salt dissolve.
  • Add the water to the mixture. Set aside.
  • In the two clean mason jars, tightly pack the asparagus spears evenly into each jar.
  • Pour the brine mixture over the asparagus spears.
  • Tap the jars on the counter to release any air bubbles and top off the jar with extra water if any asparagus spears are exposed.
  • Place the lids on the jars and screw on the rings until they are tight.
  • Leave the jars in the fridge for 2 days before tasting. Enjoy!

1 pound asparagus
Optional: lettuce leaves

Steps:

  • Gather the ingredients.
  • In a small bowl, prepare the marinade by combining the chopped onion with the vinegar, lemon juice, mustard, and salt and pepper to taste. Whisk in the oil and set aside while you prepare the asparagus.
  • Bring about 2 inches of water to a boil in a skillet large enough to lay asparagus flat. Add 1/2 teaspoon salt.
  • While the water is coming to a boil, wash the asparagus in cold water. Break off the tough base of each. Remove scales if they are large or sandy.
  • Place the spears in the boiling water. Let the water return to a boil, then simmer the asparagus gently for 5 to 7 minutes. Asparagus should be slightly crisp.
  • Drain and place the asparagus in the dish you plan to marinate them in-an oval-shaped dish works best.
  • Whisk the marinade and pour over warm asparagus. Allow it to marinate at room temperature until cool, then cover with plastic wrap and refrigerate.
  • Remove asparagus from the refrigerator and return to room temperature before serving. Serve as is or, if desired, place lettuce leaves on 6 to 6 plates and top with the marinated spears.
