Zesty Lemon Turkey with Pasta image

Here's a main dish recipe you'll want to keep handy year-round. It's elegant enough for Christmas get-togethers but easy enough for any weeknight. -Stephanie Decker, Happy Valley, OR

2 tablespoons olive oil
1 pound ground turkey
1 medium onion, chopped
1/2 medium sweet red pepper, chopped
1 cup fresh baby spinach
1 garlic clove, minced
3 teaspoons curry powder
3 teaspoons ground coriander
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1 cup chicken broth
1-1/2 teaspoons grated lemon zest
3 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon reduced-sodium soy sauce, optional
1/2 cup sour cream
Hot cooked wide egg noodles

Steps:

  • In a large skillet, heat oil over medium heat. Add turkey, onion and red pepper; cook and stir 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles; drain., Stir in spinach, garlic and seasonings; cook 1-2 minutes longer. In a small bowl, combine broth, lemon zest, lemon juice, sugar and, if desired, soy sauce; pour over turkey mixture. Bring to a boil. Reduce heat; simmer, uncovered, 6-8 minutes or until liquid is reduced by half., Remove from heat; stir in sour cream. Serve with noodles.

1 tablespoon fruity olive oil
2 garlic cloves, thinly sliced
1 tablespoon fresh rosemary, coarsely chopped
1 tablespoon dried thyme
1/2 teaspoon hot pepper flakes
2 cups large green olives
2 cups kalamata olives
1 teaspoon coarsely grated lemon peel

Steps:

  • Over medium heat, warm oil in a large skillet.
  • Add garlic and cook, stirring often, for 3 minutes until fragrant.
  • Remove garlic and discard
  • Add rosemary, thyme and hot pepper flakes.
  • Cook, stirring often, for 2 minutes.
  • Add olives, continue to stir and cook for only 2 or 3 minutes, just until until olives are warm.
  • Stir in lemon peel.
  • Serve and enjoy!

2 tablespoons butter
1 tablespoon olive oil
4 green onions, chopped, white and green parts separated
3 cloves garlic, minced
1 teaspoon lemon zest
1 cup long grain rice
¼ teaspoon turmeric powder
salt and ground black pepper to taste
1 cup low-sodium vegetable broth
1 cup 2% milk
3 tablespoons lemon juice
1 tablespoon chopped fresh dill

Steps:

  • Melt butter and oil together in a nonstick pan over medium heat. Add white parts of green onions and cook for 1 minute. Stir in garlic and lemon zest. Cook and stir until fragrant, about 30 seconds. Add rice. Season with turmeric, salt, and pepper. Cook and stir for 1 minute.
  • Stir vegetable broth, milk, and lemon juice into the pan with the rice mixture and bring to a boil, about 5 minutes. Reduce heat to a simmer, cover the pan, and cook until liquid has evaporated, 18 to 20 minutes.
  • Remove pan from heat. Fluff rice using a fork and adjust seasonings accordingly. Garnish with green parts of green onions and chopped dill.
