3 pounds cut-up broiler-fryer chicken
1/4 cup mayonnaise or salad dressing
1/4 cup zesty Italian dressing
1 teaspoon Italian seasoning

Steps:

  • Heat oven to 375°F. Place chicken, skin sides down, in ungreased rectangular pan, 13x9x2 inches.
  • Mix remaining ingredients. Brush half of mayonnaise mixture over chicken.
  • Cover and bake 30 minutes. Turn chicken; brush with remaining mayonnaise mixture. Bake uncovered about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. (If chicken begins to brown too quickly, cover with aluminum foil.) Discard any remaining mayonnaise mixture.

1 tablespoon onion powder
1 tablespoon sugar
2 tablespoons dried oregano
1 teaspoon fresh ground black pepper
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried parsley
1/4 teaspoon celery salt
2 tablespoons cajun seasoning
1/4 cup red wine vinegar (original recipe called for white wine vinegar)
2/3 cup extra virgin olive oil
2 tablespoons water
2 tablespoons mixed spice (above spice mix)

Steps:

  • In a small bowl, whisk together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt, and Cajun seasoning.
  • Store the spice mix in a tightly sealed container, and use as needed.
  • To make dressing, whisk together the vinegar, oil, water and 2 tbls. of the spice mix. Enjoy!

1 1/2 teaspoons garlic powder
1 tablespoon onion powder

1 tablespoon sugar

1/2 teaspoon dried celery leaves
2 tablespoons mix
1/4 cup vinegar
2 tablesppons water
1/2 to 2/3 cup olive oil, canola oil, or salad oil

Steps:

  • Measure out all ingredients and combine in bowl. Use in place of Zesty Dry Italian Dressing packet. Store in an air tight container or zip lock bag. To make dressing: Mix 2 tablespoons of mix with ¼ cup vinegar, 2 tablespoons water and ½ to ⅔ cup olive oil.

2 Tbsp oregano, dried
1 Tbsp parsley flakes
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp sugar
1 tsp crushed red pepper flakes
1 tsp pepper
1 tsp dried basil
1 tsp lemon-pepper seasoning
1/4 tsp dried thyme
1/4 tsp celery salt

Steps:

  • 1. Combine all of the ingredients in a Ball/Kerr type glass jar and shake to combine. You can recycle one of the empty onion powder or garlic powder bottles as well.
  • 2. To make dressing, mix 2 Tbsp mix with 2 Tbsp water, 1/4 cup vinegar (white or cider), 2/3 cup oil light olive oil and a sprinkle of lemon juice. Use the dressing right away or place in the frig for a couple hours to let the flavors mingle.
  • 3. Or you can use this mix sprinkled on chicken, red potatoes, pork chops, etc. and bake in the oven.
  • 4. Store the dry mix in an air tight container.

¾ cup extra virgin olive oil, best quality such as Colavita or Lucini
⅓ cup red wine vinegar, best quality such as Pompeian Gourmet or Domaine des Vignes
1½ tablespoons real maple syrup
1 teaspoon salt
½ teaspoon freshly ground black pepper
2½ teaspoons Worcestershire sauce
4 small garlic cloves, minced

Steps:

  • Combine all ingredients in a jar. Seal tightly with lid and shake vigorously to emulsify. Toss gently with the romaine lettuce right before serving. Store extra dressing in refrigerator for up to a week. As the dressing sits, it will separate (and solidify in the fridge), so be sure to shake well before using.

Zesty Italian seasoned pretzels are an addictive snack with a zippy garlic flavor and a bite of spiciness to them.

1 (15 ounce) bag pretzels
1 (.7 ounce) packet Italian dressing mix
3/4 teaspoon garlic salt
1 teaspoon cayenne pepper
1/2 teaspoon dried parsley
1/4 cup butter, melted
1/3 cup vegetable oil

Steps:

  • Place the pretzels in a large resealable ziplock bag. Mix together the seasonings with the oil and butter and pour over the pretzels. Shake the bag to coat all the pretzels.
  • Let the pretzels sit for 15 minutes and then shake the bag and flip it over to the other side. Let it sit another 15 minutes.
  • Preheat the oven to 250 degrees. After 30 minutes of marinating the pretzels, spread the pretzels evenly on a large cookie sheet and bake at 250 degrees for 30-45 minutes, stirring halfway through the baking time. You'll know the pretzels are done when no more oil seems to appear on the pretzels and they look well dried.
  • Let cool. Store in an airtight container.

  • Preheat oven to 300 degrees F. Line 1-2 large rimmed jelly roll sheet with parchment paper.In an extra large mixing bowl, combine rice cereal, peanuts, pretzels, cheese crackers, sesame sticks, and oyster crackers.Gently toss with large slotted spoons.Melt butter in microwave and toss together with mixture in bowl.Combine Italian seasoning, ranch seasoning powder, mustard powder, grated parmesan, and dried parsley. Save 1 tablespoon of the mixture; set aside.Sprinkle the remaining mixture over the top of the bowl then gently toss everything together.Pour mixture evenly over prepared pan.Bake in oven 30 minutes, tossing mixture halfway through baking.Sprinkle 1 tablespoon seasoning mixture of the top.
