This recipe was originally for lamb, but I adapted it to pork and adjusted the spices. After tasting these flavorful kabobs, my husband became an instant fan of this recipe. It's always requested when the grill comes out for the season. -Bobbie Jo Mller, Fallon, Nevada

2 cups plain yogurt
2 tablespoons lemon juice
4 garlic cloves, minced
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
2 pounds pork tenderloin, cut into 1-1/2-inch cubes
8 small white onions, halved
8 cherry tomatoes
1 medium sweet red pepper, cut into 1-1/2-inch pieces
1 medium green pepper, cut into 1-1/2-inch pieces

Steps:

  • In a large resealable plastic bag, combine the yogurt, lemon juice, garlic, cumin and coriander; add pork. Seal bag and turn to coat; refrigerate for 6 hours or overnight. , Alternate the pork, onions, tomatoes and peppers on eight metal or soaked wooden skewers. Grill, covered, over medium heat for about 15-20 minutes or until meat juices run clear.

2 lb boneless, skinless chicken thighs
2 lb skirt steak
2 lb boneless pork shoulder, thinly sliced
2 ½ tablespoons salt, divided
1 ½ tablespoons black pepper, divided
2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons cumin
6 cloves garlic, minced
½ cup lime juice, plus more for serving
2 large white onions, halved
1 large white onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tablespoons olive oil
10 corn tortillas, medium
1 cup guacamole
1 cup sour cream
1 cup pico de gallo
3 wooden skewers

Steps:

  • Slice the skirt steak into roughly 3-inch (7-cm) pieces. Transfer the pieces to a medium bowl.
  • Thinly slice the pork shoulder, then transfer the pieces to a separate medium bowl.
  • Pound the chicken thighs flat, then slice them in quarters. Transfer the pieces to a third medium bowl.
  • In a small bowl, combine 2 tablespoons salt, 1 tablespoon pepper, paprika, chili powder, cumin, garlic, and lime juice. Stir until there are no lumps.
  • Evenly divide the marinade among the 3 bowls of chicken, steak, and pork.
  • Toss the meats until they are evenly coated, then refrigerate for at least 30 minutes.
  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Place 3 onion halves in the middle of the baking sheet, then insert a skewer in each onion, evenly spaced, near the inner edges.
  • Thread a piece of chicken onto one skewer, then a piece of steak onto the second, followed by a piece of pork onto the third. Repeat with the rest of the meat.
  • Secure another onion half onto the tops of the skewers to hold the towers together.
  • Bake for about 1½ hours, until the meat is slightly brown on the edges.
  • Increase the oven temperature to 450°F (230°C).
  • On one side of the baking sheet, toss the bell peppers and sliced onion with the remaining ½ tablespoon of salt, remaining ½ tablespoon of pepper, and the oil.
  • On the other side of the baking sheet, spread out the tortillas. Cover the tortilla side with foil.
  • Bake for 15 minutes, until the edges of the meat and the vegetables are slightly charred.
  • Slice your meat of choice into a tortilla, add vegetables, and top with guacamole, sour cream, pico de gallo, and a squeeze of lime.
  • Enjoy!

Vegetable oil, for the grill
1 1/2 pounds pork tenderloin, cut into 1-inch cubes
1 pound andouille sausage, sliced 1/2 inch thick
4 slices thick-cut bacon, cut into 1-inch pieces
3 dill pickles, sliced 1/4 inch thick
2 large banana peppers, seeded and cut into 1-inch pieces
2 large onions, quartered and cut into 1-inch pieces
Kosher salt and freshly ground pepper
1/4 cup whole-grain or Creole mustard
1/4 cup extra-virgin olive oil

Steps:

  • Preheat a grill to medium and brush the grates with vegetable oil. Thread the pork tenderloin, sausage, bacon, pickles, banana peppers and onions onto eight 10-inch skewers; season with salt and pepper.
  • Combine the mustard and olive oil in a small bowl; brush all over the kebabs. Grill the kebabs, turning occasionally, until marked and cooked through, about 12 minutes.

I wanted tender meat with a bbq charred finish. So I stuffed the skewers of meat into my tiny slow cooker for 4 hours then grilled them for 1 minute on each side. Tender meaty goodness. Be sure to use large chunk pineapple not tidbits! Try this recipe with cubed pork! It's great too!

2 lbs cubed chicken meat
1 lb large chunk pineapple, fresh
2 fresh green peppers, chopped into large chunks
salt
pepper
all purpose Greek seasoning
barbecue sauce
8 bamboo skewers

Steps:

  • First rinse chicken in cold water. Take a bamboo skewer and set it inside your crock. Trim it to size. (My cooker is tiny, so I have to stand them up and then trim them shorter.).
  • Season meat with salt pepper and your favorite spice blend. I use a greek blend.
  • Skewer meat alternating with pineapple and green pepper.
  • Cook on high for 4 hours OR on low temp for 8 hours.
  • Remove from slow cooker and brush with Chicken n' Rib BBQ sauce.
  • Grill or BBQ at high temp, for 1 min on each side.
  • Serve with your choice of salad and side dish. (I like this recipe with basmati rice and a mandarin orange, almond and romaine salad).

1 cup fat-free Italian salad dressing
1 tablespoon honey
2 tablespoons dried red pepper flakes
1 large red bell pepper, cut into 1-inch pieces
1 large green bell pepper, cut into 1-inch pieces
1 large onion, cut into 1-inch pieces
24 (6 inch) wooden skewers (soak in water for 30 minutes before using or in Garlic Herb: Infused Skewers (#4))

Steps:

  • Place pork cubes in zip lock bag; add salad dressing, honey, red pepper flakes peppers and onions. Seal bag; refrigerate for at least 1 hour to overnight to marinate.
  • Thread pork, peppers and onion on skewers. Discard marinade. Place kabobs on greased broiler pan and broil 5 inches from heat, or grill over medium-hot coals, for about 5 minutes per side.

3 tablespoons white wine
