SPICY PIMENTO CHEESE SPREAD



Spicy Pimento Cheese Spread image

10 ounces cream cheese, softened
3/4 cup mayonnaise
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon celery seed
1 cup pickled jalapenos, chopped
6 ounces piquillo pepper, chopped (regular pimentos can be substituted)
5 cups shredded Cheddar (approximately 1 1/4 pounds)
1 to 2 tablespoons Sriracha

Steps:

  • Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.

1/8 cup dry white wine
2 tablespoons unsalted butter, (softened)
1 tablespoon fresh parsley, (basil, thyme, or rosemary)
1/2 teaspoon minced garlic

Steps:

  • Remove any rinds from hard cheeses. Cut cheeses into 1/2-inch cubes.
  • Place cheese, wine, butter, herbs, and garlic in a food processor and blend until smooth, 2 minutes.
  • Serve as-is or refrigerate for at least one hour for a firmer consistency. This can be stored in the refrigerator for up to one week.

1 (8-ounce) block reduced-fat cream cheese (Neufchâtel cheese)
1/3 cup 100% pure fruit peach jelly or preserves (we use Smucker's Simply Fruit)
1 tablespoon Sweet and Spicy Pepper Relish, plus more to serve on the side, if desired
optional for garnish: finely chopped fresh parsley

Steps:

  • Place block of cream cheese on small serving platter.
  • Spoon peach jelly over top of the cream cheese, allowing a little to drip down the sides.
  • Spoon 1 tablespoon Pepper Relish on top of peach jelly. Offer additional Pepper Relish to the side, if desired. (See note.)
  • Sprinkle a little fresh parsley on top, if desired, and serve with whole grain crackers for dipping.

I USUALLY MAKE this spread a day before I plan on serving it, since it needs time for the flavors to meld. But it also keeps well for a few weeks. It's an appetizer, that can be served with snack rye bread or assorted crackers.

2 teaspoons ground mustard
2 teaspoons hot water
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 tablespoon minced shallot
1 teaspoon capers, drained
1 teaspoon minced fresh parsley
1/2 teaspoon paprika
Assorted crackers

Steps:

  • In a small bowl, combine mustard and water; let stand for 10 minutes. In a small bowl, beat cream cheese and butter until smooth. Beat in the shallot, capers, parsley, paprika and mustard mixture until blended., Transfer to a serving bowl; cover and refrigerate for 4 hours or overnight. Serve with crackers.

1 (12-ounce) can stewed tomatoes with juice
4 to 6 cloves garlic
3 whole fresh jalapenos
1 whole medium white onion
2 to 3 tablespoons chopped fresh cilantro
4 to 6 fresh Roma tomatoes
Kosher salt
Fresh ground pepper
1/2 lime, juiced
1 1/2 pounds ground beef
1 large chopped onion
1 or 2 chopped jalapenos
1 tablespoon freshly chopped garlic
Salt and pepper
2 pounds velveta cheese, cubed
1 can cream of mushroom soup
1/4 cup whole milk
Tortilla chips

Steps:

  • Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
  • Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.
