VAL'S SPICY BAKED SHRIMP
Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes.
- Transfer bacon to a paper-lined plate to drain, reserving bacon grease in the skillet. Dice the bacon once cooled enough to handle.
- Melt butter in the remaining bacon grease over medium heat. Cook and stir diced bacon, Dijon mustard, chili powder, red pepper flakes, basil, thyme, onion, and garlic until onion is tender, about 5 minutes.
- Stir wine and seafood seasoning into onion mixture; add shrimp and toss to coat.
- Pour shrimp and onion mixture into a 9x13-inch baking dish.
- Bake in the preheated oven until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 20 minutes.

- In a small bowl, combine the sugar, lemon juice, oil and seasonings. Pour 1/4 cup marinade into a large resealable plastic bag; add shrimp. Seal bag and turn to coat; refrigerate for 30-60 minutes. Cover and refrigerate remaining marinade for basting., In a large skillet, cook bacon over medium heat until cooked but not crisp. Drain on paper towels. - Preheat the oven to 400F
- Taking cleaned and deveined shrimp, wrap with bacon.
- Place bacon-wrapped shrimp on a baking sheet.
- Combine brown sugar, smoked paprika, chili powder with melted butter.
- Brush the shrimp with the sauce and place in the oven to bake for about 15 minutes.
- After 15 minutes, coat the shrimp with more butter sauce.
- Add the shrimp to the broiler for about 1-2 minutes, until the bacon is carmelized and sizzling.

- Fully shell & de-vein the shrimp. Use shells to make stock if you so desire.
- Mix 1/2 cup of minced garlic, 1/4 cup of olive oil, and if you like a little kick add chili oil and red pepper flakes. Pour mixture over shrimp and toss well. Refrigerate till needed.
- Cut onion, red bell pepper, mushrooms, and broccoli into bite-size pieces.
- In a large saute pan cook bacon. When done remove from pan, do NOT drain pan.
- Add butter and garlic to bacon drippings. When butter is melted add onion, red pepper, and mushrooms. Add salt & pepper to taste and saute over medium high heat until wilted.
- Add shrimp & garlic mixture to pan and saute until shrimp is pink and firm. Add a pinch of red pepper flakes and mix well.
- Add stock and bring to a simmer. Combine cornstarch and water in small bowl add to pan to thicken sauce.
- Turn down heat to low and add the broccoli into pan and cover for 3 minute.
- Serve over your favorite pasta along with Parmesan cheese with a side of garlic bread and enjoy.

- Preheat oven to 400ºF
- Place oven safe baking rack on rimmed baking sheet, spray generously with nonstick. Lay bacon strips flat on rack. Bake for 10 minutes or until bacon is par cooked but still pliable. Let cool 5 minutes or until safe to handle.
- Toss shrimp with oil, salt and pepper.
- Wrap each shrimp with a piece of bacon. Secure using a toothpick then place onto rack and baking sheet.
- Bake for 9-13 minutes or until shrimp are almost fully cooked. Flip half way through cook time to achieve crisp bacon on both sides.(time will vary depending on size of shrimp)
- Mix melted butter, brown sugar and hot sauce. Brush mixture on top of each shrimp.
- Broil on high 2 minutes or until shrimp are cooked through.
- Sprinkle with freshly chopped parsley and serve.

- In a large bowl fill 1/2 with water. Squeeze in lemons, add shrimp and salt. Chill in frig for 30 minutes. Preheat oven to 350 degrees. In a meduim bowl mix together, creole seasoning, parmeson cheese, cilantro, and bread crumbs. Breakout the shrimp, drain water. Wrap each shrimp with bacon 1/2 slice. Then place in breadcrumb bowl, coat and place on a coated cookie sheet. Bake 15 minutes on one side, flip 15 minutes on the other.
