BAKED ORANGE ROUGHY
I did some experimenting to come up with this recipe. It's quick and easy enough to prepare for the family after coming home from work, and tasty enough for company.

- For tartar sauce, in a small bowl, combine the mayonnaise, sour cream, pickle relish and mustard in a small bowl. Cover and refrigerate., In a large resealable plastic bag, combine the cornflake crumbs, Parmesan cheese and seasonings. Place the milk in a shallow bowl. Dip fillets in milk, then place in bag and shake to coat. , Arrange in a greased 15x10x1-in. baking pan. Bake at 450° for 10-15 minutes or until fish flakes easily with a fork. Serve with tartar sauce and lemon.

GARLIC PARMESAN ORANGE ROUGHY
Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
- Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

EASY BAKED ORANGE ROUGHY

Steps:
- Put fish fillets in a greased 11x7 inch baking dish.
- Sprinkle with seasoned salt, pepper, and paprika.
- Drizzle with melted butter.
- Cover and bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.
ORANGE ROUGHY WITH CITRUS SAUCE
Steps:
- Soak fish in milk 10 minutes. Remove, sprinkle with salt and dredge in flour.
- Heat 2 tablespoons oil in a frying pan over medium-high heat. Cook fish until it is golden on one side, about 3 minutes. Cook second side until golden and cooked through, about 3 to 4 more minutes. Remove fish to a serving platter.
- Wipe frying pan clean. Reduce heat to low, add remaining oil and cook garlic 30 seconds. Add lime juice, lemon juice, orange juice, parsley, and green onions. Add butter, swirl in skillet until just creamy. Pour sauce over fish and serve.

ZESTY BAKED ORANGE ROUGHY RECIPE
I've been baking fish like this for years. Even with a little butter, it's relatively low fat, especially if you use non fat mayo. The mayo mixture is also quite nice as a dipping sauce for artichokes. Also, any white fish can be substituted. And if you have some herbs on hand, add them either to the dipping sauce or the mayo mixture.

Steps:
- Preheat oven to 375^F Spray 9x13 inch baking pan with cooking spray.
- Place orange roughy in pan.
- Combine mayonnaise, lemon juice to taste, and dijon mustard.
- Spread evenly over orange roughy.
- Combine bread crumbs, shallot, garlic and 1-2 tablespoons melted butter in a ziplock bag.
- Add enough butter to coat ingredients a little.
- Shake to mix.
- Sprinkle bread crumbs over orange roughy.
- Bake uncovered until fish is done and crumbs are light brown and a little crispy, 20 to 25 minutes, depending on the thickness of the fish.
- Usually it takes about 10 minutes per inch of thickness, including the topping.

- Preheat oven to 450°. In a large resealable plastic bag, combine cornflakes, cheese and salt. In a shallow bowl, combine eggs and milk. FISH BAKED IN FOIL
Easy fish dinner with very little clean up

- If preparing indoors, preheat oven to 400 degrees.
- Tear off 4 sheets of aluminum foil into sections large enough to fold over fish filets, with another couple of inches on each side to seal. Place a filet slightly off center on each sheet and add 3 lemon slices and 2 lime slices on top of each. Top each filet with ¼ of the cilantro and jalapeno pepper. Top with 1 T. of butter and sprinkle with salt and pepper, to taste.
- To seal packet, fold aluminum foil in half over the ingredients. Fold the 3 open sides, one at a time, over several times to seal the packet completely. The goal is to seal the packet tight enough to hold in the steam, but allow enough room for the air to expand.
- Place foil packet in preheated oven for 15 minutes, or place on hot grill over medium, direct heat and cook for approximately 8 - 10 minutes. Add a couple minutes to your cooking time if starting with frozen filets.
- To serve, open the foil packets, carefully avoiding the hot steam. Discard lemon and lime slices. Transfer filets to plates (if desired) or leave inside foil packets. Top with spicy peach salsa and serve.

BAKED ORANGE ROUGHY
Steps:
- Set oven to 350 degrees. Pour a light coating of olive oil into a baking dish and set aside. Rinse and pat dry the fillets and set them on top of olive oil in pan. Drizzle the 4 tbsp of additional olive oil over fillets. Sprinkle with pepper and garlic powder lightly. Sprinkle the paprika over the fillets and scatter the small cubes of butter on top. Bake approx 25 minutes until fish is flaky. Serve with a tossed salad

Cook, stirring frequently, until slightly thickened, about 7 minutes.
- In a shallow bowl, combine the flour, the remaining 1/2 teaspoon salt, and the pepper. Coat the fish with the flour mixture and shake off any excess. In a large nonstick frying pan, heat the oil over moderately high heat. Put the fish in the pan, skinned-side down, and cook until golden, about 3 minutes. Turn and continue cooking until just done, about 2 minutes longer for 1-inch-thick fillets. Mound the rice on plates and top with the fish and the sauce. Sprinkle with the cilantro, if using, and serve with the lime wedges.
