Zesty Tomato-Garlic Fish image

Simple, easy, baked fish in a lemon-garlic tomato sauce--- a great light dinner. Serve with Pasta and a salad.

Number Of Ingredients 7

1 (14 1/2 ounce) can diced tomatoes or 1 (14 1/2 ounce) can ready-cut tomatoes
2 1/2 tablespoons lemon juice
2 teaspoons garlic salt
2 tablespoons olive oil
1/8 teaspoon ground black pepper
1 1/2 lbs cod fish fillets
2 tablespoons pine nuts, toasted

Steps:

  • Preheat oven to 425 degrees.
  • in a 13x9x2-inch baking dish, combine tomatoes, lemon juice, garlic salt, olive oil and pepper; mix well.
  • Top with fish fillets in a single layer.
  • Spoon some tomato mixture over fish.
  • Bake 15 minutes or until sauce is bubbling and fish flakes easily with a fork.
  • Garnish with pine nuts.

2 lbs flounder fillets or 2 lbs other white fish
1 large onion, sliced very thin
1 (14 ounce) can chopped tomatoes
1/4 cup butter, melted (original has 1/2 cup!)
6 ounces feta cheese, crumbled
salt and pepper
cooking spray
chopped fresh cilantro (to garnish)

Steps:

  • Preheat Broiler.
  • Spray oil large broiler baking dish.
  • Arrange fish fillets in a single layer in baking dish.
  • Scatter onion over fish fillets and season with salt and pepper to taste.
  • Scatter tomato over onion and fish.
  • Drizzle melted butter over top.
  • Broil for 5-7 minutes.
  • Sprinkle with feta and continue to broil for 3-5 minutes more or until fish flakes easily and is cooked through.
  • Sprinkle with fresh chopped cilantro to serve.

1 tablespoon extra virgin olive oil
1 1/2 cups chopped onions
3 cups chopped tomatoes
1/4 cup dry white wine
2 teaspoons fresh oregano, divided
1 teaspoon red wine vinegar
3/8 teaspoon kosher salt, divided
1/4 teaspoon fresh ground black pepper
1 dash crushed red pepper flakes
4 (6 ounce) cod fish fillets
1 tablespoon chopped fresh flat-leaf parsley
2 ounces feta cheese, crumbled or 1/2 cup feta cheese

Steps:

  • Preheat oven to 400°.
  • Heat a large ovenproof skillet over medium heat. Add oil; swirl to coat. Add onion; sauté 5 minutes or until tender. Stir in tomato, wine, 1 teaspoon oregano, vinegar, 1/8 teaspoon salt, black pepper, and crushed red pepper; bring to a simmer. Cook 3 minutes, stirring occasionally. Sprinkle fish evenly with remaining 1/4 teaspoon salt. Nestle fish in tomato mixture.
  • Bake at 400° for 18 minutes or until fish flakes easily when tested with a fork.
  • Sprinkle with remaining 1 teaspoon oregano, parsley, and feta.
