ROASTED GREEN BEANS AND TOMATOES

Steps:
- Preheat oven and prep veggies: Preheat oven to 400 degrees F (200 C), then wash and cut the vegetables. Cut the stems off of the green beans, then cut into 1 inch pieces. Remove the stems from the tomatoes, then cut into 1 inch pieces (depending on tomatoes used, this may mean halving or even quartering the tomato).
- Season vegetables: Place sliced green beans and tomatoes on a baking sheet, drizzle with olive oil, and toss to coat the vegetables completely. Then season vegetables with sliced garlic, salt, pepper and any other desired seasonings like dried or fresh herbs.
- Bake vegetables: Roast the tomatoes and green beans in the oven until they soften and begin to brown, which will take about 25 minutes. After 10-15 minutes of roasting, use a spatula to move the vegetables so they brown on all sides. Remove from the oven and serve immediately as a side dish, or let them cool and save for later use.

THE best green beans I have ever eaten!!!!! My husband and I were fighting over them!!! He could not believe they were from Weight Watchers. I use frozen whole green beans that I let thaw on the counter, a ton more garlic and fresh basil because we just LOVE those two together. Delish!!!!!!!!

- Preheat oven to 450ºF. Coat a large roasting pan with cooking spray.
- Place green beans in a single layer in prepared pan and coat with cooking spray. Roast until desired doneness, stirring once or twice, about 10 to 15 minutes, 25 minutes if using frozen.
- Meanwhile, in a medium bowl, combine tomatoes, basil, garlic, salt and pepper; set aside.
- When green beans are finished, remove from oven and spoon tomato mixture into pan; toss thoroughly. Serve hot, room temperature or chilled. Yields about 1 cup per serving.

GREEN BEANS WITH CHERRY TOMATOES
This makes for a pretty dish and is easy to assemble. If you don't have the fresh vegetables on hand, you can easily adapt with canned goods. I get requests for the recipe all the time.

- Cook beans in water, until tender.
- In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper.
- Swish cherry tomato halves around until barely soft and heated, but not squishy.
- Add the drained beans and mix well.
- (TO SAVE TIME, you can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works o).
SIMPLY THE BEST GREEN BEANS
We eat these green beans at least once a week and I haven't found anything to top them. The secret ingredient is the spice blend. I originally found this blend at Gordon Food Services in Michigan. (I have to have my mom ship it to me once a year; the 26 oz container of the spice lasts me about that long). I recently tripled the recipe and took them to work for a lunch for 20 people. Personally, I still like them better from the stove top but I would take them again in a crock pot knowing that I need to stir often so the beans on the outer edge do not get over done. (People did actually go back for seconds)

- Put frozen green beans in the pan and stir to coat the beans with oil.

- Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.
- Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

Steps:
- Put sugar snap beans, garlic, zucchini, chopped tomatoes, green chilli, onion, green pepper, cumin, oregano and vegetable into a large soup pot. Puree roasted peppers with chipotle sauce and jalepeno in a blender or food processor, and add to soup.
- Cover and bring to a boil over high heat.
- Reduce heat to low, and simmer, partly covered, for about 10 minutes.
- Stir in salt, lime juice and coriander.
- Serve.
