In fall or any time of year, this nutty, rich and delicious pecan pie recipe is one I am proud to serve. While it seems very special, this caramel pecan cheesecake is a snap to make. -Becky Ruff, Monona, Iowa

1 sheet refrigerated pie crust
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
4 large eggs, room temperature
1 teaspoon vanilla extract
1-1/4 cups chopped pecans
1 jar (12-1/4 ounces) fat-free caramel ice cream topping
Additional fat-free caramel ice cream topping, optional

Steps:

  • Preheat oven to 375°. Line a 9-in. deep-dish pie plate or cast-iron skillet with crust. Trim and flute edges. In a small bowl, beat cream cheese, sugar, 1 egg and vanilla until smooth. Spread into crust; sprinkle with pecans., In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until blended. Pour slowly over pecans., Bake 35-40 minutes or until lightly browned (loosely cover edges with foil after 20 minutes if pie browns too quickly). Cool on a wire rack 1 hour. Refrigerate 4 hours or overnight before slicing. If desired, garnish with additional caramel ice cream topping.

This is so simple and SO delicious! I was trying to find a way to make a desert with the few ingredients I had on hand and this is what I came up with. Hope you enjoy!

Number Of Ingredients 8

1 (5 1/8 ounce) package instant vanilla pudding
2 cups cold milk (to make the pudding)
1 (8 ounce) package cream cheese (room temperature)
1 cup milk
1 cup sugar
2 tablespoons vanilla extract
1 (15 ounce) can canned strawberries in syrup
30 saltine crackers

Steps:

  • In small mixing bowl combine pudding mix and 2 cups milk (or what the pudding recipe calls for.) Stir until it thickens, then set aside.
  • In medium mixing bowl, combine cream cheese, 1 cup milk, sugar, and vanilla. Blend until smooth.
  • Add the pudding to the cream cheese mix and blend.
  • In pie dish, crumble crackers to coat the bottom and make a nice crust.
  • Pour pudding/cream cheese mixture into the pie dish and use a spatula to level the mix.
  • Arrange the strawberries around the top of the pie. Drizzle a small amount of the light syrup on top.
  • Place in the freezer for about 5 hours.

The taste of a Nanaimo bar in a cheesecake! Can't get any better than this. Make in the jelly roll pan for serving a larger crowd. Result is thinner but still as tasty. (You will need to adjust baking time if you use the bigger pan.)

2 ½ cups crushed chocolate cream-filled sandwich cookies (such as OREO® Cookies)
½ cup butter, melted
¼ cup chopped pecans
½ cup flaked coconut
4 (8 ounce) packages cream cheese, softened
1 cup white sugar
¼ cup custard powder (such as Bird's® Custard Powder)
4 eggs
6 (1 ounce) squares semisweet chocolate
½ cup heavy cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Stir together the cookie crumbs, melted butter, pecans, and coconut in a bowl until the mixture is well combined. Press into the bottom of a 9x13-inch baking dish, and refrigerate while making filling.
  • Beat cream cheese, sugar, and custard powder in a large bowl with an electric mixer until light and fluffy, and beat in eggs, 1 at a time, beating each until fully incorporated before adding the next. Layer the filling over the crust.
  • Bake in the preheated oven until the center is almost set, about 40 minutes. Refrigerate the cheesecake until fully cold, at least 3 hours.
  • Melt the semisweet chocolate in a saucepan over very low heat with the cream, and stir until the mixture is smooth and well blended. Pour the chocolate mixture over the cheesecake, spread with a spatula to cover the middle layer, and refrigerate until the topping is firm, 15 to 20 minutes. Serve cold. Store leftovers in refrigerator.

1-1/4 cups graham cracker crumbs
1/3 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1/2 teaspoon finely grated lemon zest
TOPPING:
1 cup sour cream
2 tablespoons sugar
1/2 teaspoon vanilla extract
Additional lemon zest, optional
Mint leaves, optional

Steps:

  • In a bowl, combine cracker crumbs and butter. Firmly press onto the bottom and up the sides of a 9-in. pie plate. Cover and refrigerate for 30 minutes. , In a large bowl, beat the cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in vanilla and lemon zest just until blended. Pour into prepared crust. , Bake at 325° for 20-25 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla; spread carefully over pie. Bake 5 minutes longer. Cool on a wire rack for 1 hour. Refrigerate overnight. Garnish with mint and lemon zest if desired. Refrigerate leftovers.

1 - handful canadian smarties
1 - piecrust
16 oz - creme cheese (softened )
2 - eggs
1 teaspoon(s) vanilla extract
1/4 cup(s) frozen whipped topping, thawed

Steps:

  • Preheat oven to 375 degrees. Spread chopped coffee Crisp and Smarties at the bottom of pie crust.
  • Add creme cheese to a large bowl and with an electric mixer on a medium speed , creme ingredients together for approximately 2 minutes. Add vanilla and continue beating until mixture is well combined. reserving a pinch of candy to garnish during remaining candy in the cream cheese . mix blend together pour into crust
  • Place in preheated oven and bake until center is almost set, approximately 30 to 35 minutes. Chill cover loosely at least 4 hours or overnight. Garnish whipped topping and reserve candy pieces when ready to serve.
