HOMEMADE ZA'ATAR
This za'atar spice recipe is easy to make at home from scratch with just four ingredients. While in Lebanon wild thyme is used, regular thyme from the supermarket or your garden makes a fine substitute. Za'atar refers both to the thyme plant itself, as well as this spice mix.

ZA'ATAR-SPICED ZUCCHINI

Steps:
- Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
- Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
- Stir 1/4 cup za'atar and 2 tablespoons olive oil into a paste; season with salt and pepper.
- Rub zucchini with za'atar and grill, turning once, until nicely browned and tender, 6 to 8 minutes. Garnish with parsley.

- Mix all the ingredients together in a small bowl. Store in an airtight container.
- For the most flavor, toast whole seeds (cumin seeds and coriander seeds) until fragrant, then grind. This will make the most flavorful zaatar. If you don't have whole seeds, feel free to use ground spices.

ZA'ATAR ZUCCHINI
i threw this dish together when i wanted to do something extra special with zucchini. i was thinking of the delicious zucchini-feta balls the lady at a moroccan food truck in philly used to have me try with my regular falafel. with the addition of the zatar, the dish is very middle eastern, and the feta grounds and warms everything.

- saute onions until translucent.

- Line a colander with cheesecloth and add the grated zucchini, onion, and kosher salt. Toss gently to combine and let drain for 10 minutes. Gather ends of the cheesecloth and squeeze as much liquid as possible from the zucchini and onion.
- In a large bowl, combine the gluten-free flour, baking powder, za'atar, cumin, pepper, and feta cheese. Stir gently, then add the egg and milk and stir to combine. Batter with seem dry. Add the zucchini and onion and stir until thoroughly mixed.
- Preheat Cuisinart 360 Griddle Cooking Center to high heat. Once hot, drizzle with olive oil. Once the olive oil is shimmering, add 2-3 tablespoons of batter and let cook for 5-10 seconds before taking a fork and spreading the batter out into a very thin patty. The thinner the patty, the crispier it will cook. Let cook for 3 minutes per side, or until golden brown and crisp, adding more oil to the griddle as needed. Cook fritters in batches until done, then serve alongside fresh labneh and enjoy!

- Slice the zucchini on the diagonal, into ½ inch thick slices and place into a large bowl. Drizzle w/ olive oil, sprinkle w/ salt and zaatar spice and add the finely minced garlic. Using your hands, toss to combine until well mixed.
- Place zucchini on the hot grill using tongs. Turn heat down to medium high and close the lid and give a good sear, about 5 minutes. when there are good grill marks, turn over. turn heat down to medium, cover, grill until cooked through about 5 more minutes. If you like them very tender, move them to an upper rack, cover and continue to cook, on very low heat or place in a pan and cover with foil, letting them steam.
- When cooked to desired tenderness, place zucchini on a platter. One one side of the platter, or in a little bowl, spoon on Smoked Yogurt, Geek style yogurt or Labneh, garnish with a few cherry tomatoes, sprinkling of italian parsley, a squeeze of lemon and if you like a little drizzle of olive oil.
