EASY DEVILED EGGS
Steps:
- Hard boil your eggs and rinse with cool water.
- When cooled, peel off shells and cut each egg in half. Put each egg yolk half in a food processor. Mix in salt, mustard, pepper and mayonnaise.
- Fill eggs with with creamy yolk mixture. Sprinkle with paprika. Serve and devour!

- 1. Cut eggs from north to south. Remove yolks, put in small food chopper.
- 2. Blend with truffle oil, mayonnaise and sour cream.
- 3. Using a piping bag - pipe or spoon into empty eggs halves.
- 4. Garnish with one piece of sea salt, chives or parsley and if you have them a small sliver of truffle. Sprinkle with a little pepper. Cover and refrigerate for an hour. Remove 15 minutes before serving

- Place eggs in single layer in saucepan; add enough water to completely cover eggs by at least 1 inch. Bring water boil; cover. Remove saucepan from heat; let stand 15 min. Drain eggs; immediately place in bowl of ice water. Let stand until completely cooled, changing water if necessary.
- Cut eggs lengthwise in half. Remove yolks; place in medium bowl. Mash with fork. Add mayo, lemon zest, juice and red pepper; mix well.

When I saw the ingredients for the RSC contest(Feb. 2010), this came to mind. I love the lemon zest in this and the smoked paprika is so good! This recipe is easily doubled or tripled.

Steps:
- Place the eggs in a saucepan and cover with lukewarm water.
- Add the white vinegar and a pinch of salt.
- Bring to a full boil over medium heat,then boil for 2 more minutes.
- Remove from heat and cover with a lid.
- Let the eggs sit for about 10 minutes. Drain the eggs and run under very cold water to cool them down. Place eggs in ice water for about 5 minutes.
- Drain and peel.
- Remove yolks from egg whites carefully and mash with a fork in a bowl. Add mayonnaise, cream cheese, mustard, vinegar, lemon zest, green onion, salt and pepper. Stir to mix thoroughly.
- Spoon(or pipe) into egg whites and sprinkle smoked paprika generously over the tops.
- If you like, place a little green onion slices on top of eggs. Enjoy!
