Easy Deviled Eggs image

A simple and easy deviled egg recipe.

Number Of Ingredients 6

6 hard-cooked eggs
1/4 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
3 Tbsp. light mayonnaise
paprika (for serving)

Steps:

  • Hard boil your eggs and rinse with cool water.
  • When cooled, peel off shells and cut each egg in half. Put each egg yolk half in a food processor. Mix in salt, mustard, pepper and mayonnaise.
  • Fill eggs with with creamy yolk mixture. Sprinkle with paprika. Serve and devour!

6 large hard boiled eggs
1 Tbsp white truffle oil
1 Tbsp sour cream
1 Tbsp mayonnaise
1/2 tsp grinded pepper
a handful of coarse sea salt
1 tsp chopped parsley/chives
1/4 tsp lemon zest

Steps:

  • 1. Cut eggs from north to south. Remove yolks, put in small food chopper.
  • 2. Blend with truffle oil, mayonnaise and sour cream.
  • 3. Using a piping bag - pipe or spoon into empty eggs halves.
  • 4. Garnish with one piece of sea salt, chives or parsley and if you have them a small sliver of truffle. Sprinkle with a little pepper. Cover and refrigerate for an hour. Remove 15 minutes before serving
  • 5. Bon Appetit

6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
2 tablespoons mashed avocado
1 teaspoon minced fresh cilantro
1/2 teaspoon grated lime zest
1/2 teaspoon lime juice
1/8 teaspoon salt
1/8 teaspoon pepper
Pico de Gallo or tomatoes, optional

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites and four yolks (discard remaining yolks or save for another use)., In a large bowl, mash reserved yolks. Stir in mayonnaise, avocado, cilantro, lime zest, lime juice, salt and pepper. Stuff or pipe into egg whites. If desired, garnish with tomatoes. Chill until serving.

12 extra large eggs, hard boiled, cooled and peeled
1/2-3/4 cup mayonnaise, can use low-fat
2 teaspoons prepared mustard
1 tablespoon sweet pickle relish
1 teaspoon dried dill weed
1/4 teaspoon pepper
1/8-1/4 teaspoon salt
paprika, sprinkle for garnish

Steps:

  • Slice eggs lengthwise and carefully remove yolks. Place yolks in a mixing bowl and whites on a platter.
  • Mash yolks with a fork or potato masher.
  • Mash in the mayo, mustard, relish, dill weed, pepper and salt.
  • Pipe/spoon this filling into the yolk cavities of the egg whites.
  • Lightly sprinkle w/ paprika for garnish.

1/2 tsp. zest and 1 tsp. juice from 1 lemon
1/8 tsp. ground red pepper (cayenne)
3 slices OSCAR MAYER Deli Fresh Honey Ham, quartered
1-1/2 tsp. chopped fresh parsley

Steps:

  • Place eggs in single layer in saucepan; add enough water to completely cover eggs by at least 1 inch. Bring water boil; cover. Remove saucepan from heat; let stand 15 min. Drain eggs; immediately place in bowl of ice water. Let stand until completely cooled, changing water if necessary.
  • Cut eggs lengthwise in half. Remove yolks; place in medium bowl. Mash with fork. Add mayo, lemon zest, juice and red pepper; mix well.
  • Place 1 ham piece in center of each egg white half; fill with yolk mixture. Top with parsley.

When I saw the ingredients for the RSC contest(Feb. 2010), this came to mind. I love the lemon zest in this and the smoked paprika is so good! This recipe is easily doubled or tripled.

4 eggs
1 teaspoon white vinegar
1 pinch salt
2 tablespoons mayonnaise (plus 1 tsp. if desired, to make it just a tiny bit creamier)
2 tablespoons low-fat cream cheese (neufchatel)
1/2 teaspoon spicy brown mustard (whole grain is good)
1/2 teaspoon rice vinegar
1/2 teaspoon fresh lemon zest, grated small
1 tablespoon green onion, thinly sliced
1/8-1/4 teaspoon salt (to taste)
1/8 teaspoon fresh ground black pepper
1/8-1/4 teaspoon smoked paprika
green onion, slices (to garnish) (optional)

Steps:

  • Place the eggs in a saucepan and cover with lukewarm water.
  • Add the white vinegar and a pinch of salt.
  • Bring to a full boil over medium heat,then boil for 2 more minutes.
  • Remove from heat and cover with a lid.
  • Let the eggs sit for about 10 minutes. Drain the eggs and run under very cold water to cool them down. Place eggs in ice water for about 5 minutes.
  • Drain and peel.
  • Remove yolks from egg whites carefully and mash with a fork in a bowl. Add mayonnaise, cream cheese, mustard, vinegar, lemon zest, green onion, salt and pepper. Stir to mix thoroughly.
  • Spoon(or pipe) into egg whites and sprinkle smoked paprika generously over the tops.
  • If you like, place a little green onion slices on top of eggs. Enjoy!
