My two young boys would only eat boxed mashed potatoes, until I came up with this recipe. Little do they (and my finicky husband) know they are also eating their archenemy, onions!! This dish is different because you boil the seasoning with the potatoes instead of adding them later, thus a milder flavor. Serve piping hot with butter or homemade gravy although they don't need either. Enjoy!!!

8 medium baking potatoes, peeled and diced
½ cup chopped onion
3 cloves garlic, sliced
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon ground black pepper
1 cup sour cream
¼ cup butter or margarine
½ cup milk
12 drops yellow food coloring
salt and pepper to taste

Steps:

  • Place the potatoes into a large pot, and fill with enough water to cover by 1 inch. Add the onion, garlic, basil, 1 teaspoon of salt and 1/2 teaspoon of pepper, and bring to a boil. Cook until potatoes are tender, about 15 minutes.
  • Drain the contents of the pot in a colander, then transfer to a large bowl. Add the sour cream, butter, milk and food coloring, and beat with an electric mixer until light. Adjust milk if needed. Do not beat too long, or the potatoes will become stiff and pasty. Taste and adjust salt and pepper before serving.

I'm really picky about tater salad and so I decided to make up my own to my tastes... we all thought it was pretty good :) Well, we think it's very good! Hope you enjoy!

Number Of Ingredients 10

5 pound(s) red potatoes
2 tablespoon(s) minced onion flakes
6 - eggs, hard boiled (3 for in the salad/3 for garnish)
4-5 stick(s) celery (finely chopped)
1/4 cup(s) bacon bits (real bacon bits, not bacos)
1 1/2 -2 cup(s) mayonnaise (to taste)
2-3 tablespoon(s) yellow mustard (to taste)
- salt and pepper (to taste)
2-3 tablespoon(s) dill weed
optional - paprika or fresh parsley for garnish

Steps:

  • clean and cut red potatoes in bite size pieces add the minced onion(you may add more or less depending on your taste), then boil them just to done, you don't want them overcooked or they'll be mushy. The onions will be rehydrated and will have helped flavor the potatoes.
  • while the potatoes are boiling chop up 3 of the eggs and set aside, slice the other 3 eggs for garnish,chop the celery and have all the rest of the ingredients ready for when the taters are cooked.
  • drain the taters and onions in colander and return to pot you cooked them in or a large bowl, let them cool for about 5-10 minutes (I stir them a bit to help them out)
  • Add all the rest of the ingredients(except the SLICED egg)and stir until it's all mixed well. **Keep in mind, all of the ingredients are **to your taste**
  • Transfer to another bowl and garnish with the sliced eggs, parsley or paprika or whatever you like! Enjoy!! Be sure to refrigerate!! (of course it can be eaten warm too...yummy!)

PIONEER WOMAN TATER TOT CASSEROLE

1 ½ teaspoon chili powder
¾ teaspoon garlic powder
½ teaspoon salt
½ teaspoon onion powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
¾ teaspoon dried oregano
⅛-1/4 teaspoon cayenne pepper (optional)
1 ½ tablespoon olive oil
½ large white or yellow onion, diced
1 large sweet pepper (red, orange, or yellow), seeded and diced
1 pound ground turkey, preferably 90-93% lean
1 cup salsa
1, 15 oz. can of black beans or pinto beans, drained and rinsed
2 cups reduced-fat shredded Mexican cheese blend
2 ½ cups frozen tater tots
Toppings: sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.

Steps:

  • Start by preheating your oven to 425 degrees Fahrenheit.
  • Combine chili powder, garlic powder, salt, onion powder, cumin, paprika, oregano, and cayenne pepper in a small bowl.
  • Use a 12" cast iron or other non-stick skillets to heat the olive oil over medium or medium-high heat, or until the oil sputters when flicked with water.
  • Saute the onion and sweet pepper in the skillet for 4 minutes, stirring every 30 seconds or so, or until the onions are translucent and the peppers are softening.
  • Add the ground turkey and seasonings to the onions and peppers and cook for 4-5 minutes, stirring and breaking up the turkey as it cooks, until it is crisp and cooked through, and the mixture is fragrant.
  • Stir in the salsa and drained beans to the turkey mixture. Bring the ingredients to a boil and cook for 5-7 minutes, stirring every 1-2 minutes, or until the liquid has evaporated and the mixture has thickened.
  • Then, remove the pan from heat. If you're using a cast-iron skillet, sprinkle the cheese evenly over the turkey, followed by the tater tots evenly spaced (about 1" between each). If using a non-stick or non-oven safe skillet, pour the turkey into a greased 8 x 13" baking dish and top with cheese. Pipe the tater tots on top and sprinkle with cheese.
  • Bake the Pioneer Woman Tater Tot Casserole for 22-25 minutes, or until the cheese has melted and the tater tots are crispy.
  • Remove from the oven and serve hot with taco toppings of your choice!

1.5 pounds lean ground beef
1 bell pepper diced
1 onion diced
1 tablespoon montreal steak seasoning
1 cup catsup
¼ cup brown sugar
1 tablespoon yellow mustard
2 cups frozen tater tots

Steps:

  • Preheat oven to 375 degrees.
  • Dice on onion and green pepper.
  • Brown ground beef if a large skillet over medium-high heat, drain fat.
  • Add diced bell pepper, onion and montreal steak seasoning. Sauté for five minutes until the onions are transparent and bell pepper is softened.
  • Add the catsup, brown sugar and mustard, combine mixture thoroughly.
  • Top with frozen tater tots, place in preheated oven for 30 minutes.
  • If desired place casserole under broiler for 2-3 minutes to crisp up the tater tots.
