YUMMY YAM FROSTING
This naturally sweet, beautiful golden-orange frosting is used to top cookies, cupcakes, quick breads, graham crackers, or gingerbread people. This recipe makes enough to frost 2 dozen cookies or a one-layer cake.

Steps:

YUMMY YAM CASSEROLE
I call this the 'recipe with legs' because every time I serve it, the recipe is requested. Even those who dislike yams and sweet potatoes love this tasty dish! This dish can be frozen, but freeze it without the pecan topping. Defrost before baking.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.
- Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.
- Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.
- Bake for 25 minutes in the preheated oven, or until browned and bubbly.

YUMMY YAM CASSEROLE
My boss' wife always makes these for the annual Christmas party. They are to die for. Better than the kind made with marshmallows IMHO. Thanks, Holly! Note: This recipe can be doubled and placed in one large 9x13 dish but the baking thime also needs to be doubled. Steps:
- Preheat oven to 350.
- Whip together "yam" ingredients and pour into a 9x13 glass baking dish.
- Mix "topping" ingredients until it resembles coarse crumbs and drop over top of yam mixture.
- Bake for 30 minutes.
- To freeze: Assemble casserole as directed up to the point of baking. Cover well with foil. Label and freeze.
- To serve: Thaw in fridge, uncover and bake as directed.

DOWN SOUTH YAM CAKE
I think I adapted this recipe from something printed on a can of yams about 20 years ago. I have always enjoyed this during the fall and winter seasons, and I think you will too. It is a nice change of pace from the usual spice cake.

- Preheat oven to 325 degrees. Grease and flour a 10-inch tube pan.
- In large bowl, cream sugar, butter and vanilla until light and fluffy. Add eggs, one at a time, beating well after each addition.
- Cut up yams; add to creamed mixture, beating well until combined thoroughly.
- Add flour, cinnamon, soda, baking powder, salt and nutmeg and mix well.
- By hand, fold in pecans, raisins and drained pineapple. Spoon batter into prepared pan, spreading evenly. Bake for 60-70 minutes, or until tothpick inserted in center comes out clean.
- Cool upright in pan for about 10 minutes, then invert onto serving plate and cool completely.
- Meanwhile, in medium saucepan, heat frosting over medium heat just until meted, stirring occasionally. Spoon over cooled cake, allowing some to run down sides.
