TOFU SCRAMBLE RECIPE BY TASTY



Tofu Scramble Recipe by Tasty image

Here's what you need: tofu, bell pepper, onion, oil, salt, black pepper, onion powder, garlic powder, turmeric, lemon juice

Number Of Ingredients 10

16 oz tofu
1 bell pepper
½ onion
2 teaspoons oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon turmeric
1 tablespoon lemon juice

Steps:

  • Drain tofu from container, wrap it in a paper towel, and place it on a plate. Rest another plate on top of the tofu and microwave for 3-5 minutes.
  • Unwrap the tofu and cut into cubes.
  • Place the tofu in a bowl and mash with a fork.
  • Cut the top off a bell pepper and remove all the seeds and thinly slice.
  • Chop the onion.
  • Heat oil in a pan over medium heat. Add the onions and peppers, and cook until softened.
  • Add in the tofu and cook on medium heat until most of the water has evaporated.
  • Add the salt, pepper, onion powder, garlic powder, and cumin, and mix well, until all the seasonings are evenly distributed.
  • Add the lemon juice to the tofu and mix until evenly combined.
  • Remove the tofu from the heat and serve.
  • Enjoy!

I used to buy the mix from fantastic foods, but they stopped making it so this is an improvisation that is just as good. Great for breakfast or lunch with tons of healthy goodness. I am not even vegetarian and love this recipe.

Number Of Ingredients 7

1 (8 ounce) package of nasoya extra firm tofu, cubed (or other brand)
1/4 cup veggie crumbles, whole grain mix (Fantastic World Foods Vegetarian Nature's Burger)
3/4 cup O'Brien potatoes
2 links Morningstar Farms vegetarian breakfast links (or other vegan sausage brand)
2 tablespoons of medium salsa
1/4 teaspoon pepper (to taste)
non-stick butter-flavored cooking spray

Steps:

  • Cook Potatoes O'Brien in a large frying pan with non-stick butter spray under medium/low heat.
  • Add pepper.
  • Put tofu in bowl and chop up cubes as much as possible with a sharp knife. You want it to resembled a scrambled look so maybe 1/2 or more of each cube size.
  • Add in Fantastic World Foods Vegetarian Nature's Burger mixture and continue cutting and mixing.
  • Add tofu/burger mixture to frying pan with potatoes. Raise heat to med/high.
  • Microwave sausage links as instructed on box and cut into little tiny pieces and put into frying pan.
  • Add salsa and cook until you start seeing a golden brown. About 5-10 minutes.
  • Please note mix is 170 cal; 3g fat; 300 mg sodium; 29g carbs; 4g dietary fiber; 1g sugar; 8g protein (divide that by 3 for each serving).

I adapted this from a friend's recipe. My family requests this a lot for breakfast. Tastes great on toast or by itself. I LOVE avocado and find it tastes great sliced on toast with the scrambled tofu.

Number Of Ingredients 10

1 lb firm tofu
1 tablespoon soy sauce (I use the healthier BRAGG liquid aminos)
1 tablespoon onion powder or 2 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon turmeric
1 tablespoon italian seasoning
1 green bell pepper, chopped
1 -2 tomatoes, chopped
1 tablespoon canned green chilies (optional) or 2 tablespoons dried green pimientos (optional)
black salt, to taste (this sulferic salt is optional but makes a huge difference in making the tofu taste more like eggs,)

Steps:

  • Crumble tofu with hands.
  • In a skillet mix tofu and everything except the tomatoes together well. Heat for 5 to 8 minutes.
  • Add the tomatoes and then continue heating until thoroughly heated (about 5 to 8 minutes more.

Ready, Set, Cook! Special Edition Contest Entry: I am not a vegan or vegetarian, but I love this dish. It can be done any time of the day and is very filling. Super high protein and very healthy! This has been adapted from the original one I posted, but anything can be added for more goodness. If you do not have the tofu mix use Fantastic World Foods Vegetarian Nature's Burger 1/4 cup.

1 (8 ounce) package extra firm tofu, cubed (nasoya)
1 1/2 ounces tofu scrambler
3/4 cup Simply Potatoes Diced Potatoes with Onion
2 links Morningstar Farms vegetarian breakfast links (or other vegan sausage brand)
2 tablespoons chunky salsa
1/4 teaspoon pepper
1/8 teaspoon cumin
1/2 cup red bell pepper, diced
1/2 cup fresh spinach, chopped
1/4 cup green onion, chopped
butter-flavored cooking spray

Steps:

  • Chop peppers, spinach and green onions.
  • Cook Simply Potatoes in a large frying pan with non-stick butter spray under medium/low heat.
  • Add pepper and cumin.
  • Put tofu in bowl and mush with fork till everything is in crumbles You want it to resembled a scrambled look so maybe 1/2 or more of each cube size.
  • Add in Tofu Scramble seasoning and continue cutting and mixing.
  • Add mixture to frying pan with potatoes. Raise heat to med/high.
  • Microwave sausage links as instructed on box and cut/mince into little tiny pieces and put into frying pan.
  • Add salsa and cook until you start seeing a golden brown. About 5-10 minutes.
