YUMMY QUESADILLAS
I got this original recipe from Top Secret Restaurant Recipes by Todd Wilbur. Haven't made TOO many changes. Sometimes we add seasoned chicken to these as well. They really do taste like something that would come from a restaurant.

Steps:
- Heat a large frying pan over medium heat.
- Spread half of the butter on one side of each tortilla.
- Put tortilla, butter side down, in the hot pan.
- Spread the 1/2 the cheeses evenly onto the center of the tortilla in the pan. Sprinkle 1/2 of the tomato, onion and jalapeno, bacon, cilantro, salt and pepper over half the tortilla (on top of the cheese.)
- When the tortilla had browned and the cheese is melted, fold the tortilla (like an omlet).
- Remove from pan and cut into 3 slices.
- Repeat with other tortilla and remaining ingredients.
- Serve with sour cream, salsa, and guacomole.

CHICKEN QUESADILLAS
Incredible Chicken Quesadillas are packed with juicy chicken, peppers, onions, garlic, and lots of melty cheese. They are an easy and healthy idea that is perfect for those hectic weeknights.

- Cut chicken breasts into small bite size pieces. Heat oil over medium-high heat in a large heavy duty pan. Add the chicken breasts and taco seasoning to the pan. Sautee 4-5 minutes then add the bell pepper, onion, and garlic, sautee another 5 minutes or until the chicken is cooked through. Remove mixture from the pan and set aside.
- To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of shredded cheese, and 1/4th the chicken mixture, then with more cheese. Fold the tortilla and cook on both sides until crispy and golden. Remove from the pan and repeat with remaining tortillas.
- To serve: Slice tortillas in half or thirds and serve with sour-cream, salsa, guacamole or your favorite dipping sauce.

- Shred the cheese on the large holes of a box grater. Combine the cheeses in a large bowl.
- Place about 1 cup of cheese on half of each tortilla. Fold tortilla in half.
- Heat the oil in a large pan over medium heat. Place two fold in half tortillas in the pan.
- Cook the quesadillas until they are browned on both sides and the cheese is melted.
- Transfer to a plate, sprinkle with salt and cut into triangles.
- Enjoy!

- Heat a grill pan on medium high heat. Rub a teaspoon of olive oil on the bell pepper and place on the grill pan. Grill until blackened on each side, turning every few minutes. Place the grilled bell pepper in a paper bag and let stand about 10 minutes. Remove pepper from bag, peel off the blackened skin, remove the seeds and slice into strips. Set aside.
- In a small bowl, combine the vinegar, honey and 2 tablespoons of olive oil. Season with salt and pepper. In a small pan, heat 2 tablespoons of olive oil over medium heat and add the garlic and red onion. Cook until tender and slightly translucent. Add the balsamic sauce to the onions, mix well and cook over medium heat for 4-5 minutes. Remove from heat.
- Heat 1/2 teaspoon of the butter in a large pan over medium heat. Place a tortilla in the pan and sprinkle one half with 1/4 cup of cheese. Then layer with 1/2 cup of chicken mixture, sprinkle with one-third of bell pepper, 1/3 cup of arugula and 1/4 cup of cheese. Fold the tortilla in half covering the filling and cook for 2-3 minutes a side, or until golden brown. Repeat with the remaining tortillas and ingredients.
