  • In a small bowl, mix together the ground flax seeds and water. Stir and set aside to thicken. About 10 mins. In the meantime prep the rest of the ingredients.
  • Add all of the dry ingredeints to a large mixing bowl. Mix well with a fork or a whisk and then add the curdled buttermilk, thickened flax egg, and vanilla. Stir to combine, but do not overmix. Lumps are ok.
  • When the waffle iron is warm, spoon the batter into the center. Do not overfill. Then close and cook until golden brown. Tip: Let them brown into an even golden brown color. Try to resist the urge to remove the waffle right when it shows the first sign of browning. You want an even, lightly golden hue all over the surface of each waffle.

  • In a large bowl mix together the flour, baking powder and sugar. Gently crush the cardamom pods to break them open, then remove the seeds and discard the husks. Grind the seeds using a mortar and pestle, and add the ground cardamom to the flour mix.
  • Whisk together the milk, yogurt, oil and vanilla, then add to the dry ingredients. Whisk very thoroughly to give a smooth, thick batter. Set aside to stand for a few minutes while you heat the waffle maker.
  • Heat the waffle maker on a fairly high setting (if you have settings). Brush the waffle irons liberally with oil to prevent the waffles from sticking.
  • Pour about ⅓ of the batter into the waffle maker and close the lid. Cooking time will depend on your particular machine but should be in the region of 4-6 minutes. The waffles are done when they are golden brown and lift easily out of the waffle iron.

Dec 1, 2014 - Waffles are a Norwegian tradition. Unlike the Belgium waffles, Norwegian waffles are large, soft and fluffy, and fit perfectly folded in your hand. Soured milk is a usual ingredient, however, it can be replaced by fresh milk. The toppings are simple but yummy: slices of Norwegian brown cheese, a spread of sour cream and jam, or just a sprinkling of sugar.
