Blueberry Oat Bran Muffins image

These flourless, sugar-free muffins make a delicious and satiating snack! Sweetened with applesauce and filled with fiber.

Number Of Ingredients 10

1 1/4 cups oat bran
3/4 tsp baking soda
1/4 tsp sea salt
1/4 tsp cinnamon
1/2 cup applesauce
1/4 cup milk of your choice
1 large egg white
1 Tbsp oil of your choice (I use olive)
1 tsp vanilla extract
1/4 cup blueberries

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the dry ingredients.
  • Mix the wet ingredients in a smaller bowl.
  • Add the wet mix into the dry ingredients and stir just until combined. Gently add in the blueberries toward the end of mixing.
  • Divide the batter among 10-12 paper muffin cups, depending on your preferred size.
  • Bake for 10-15 minutes.

These best-ever Blueberry Oat Bran Muffins are made without any flour or refined sugar and are vegan, low carb and gluten-free! They're perfect as your fiber-rich go-to breakfast, snack or healthy dessert.

Yield 12 muffins

Number Of Ingredients 9

2 1/2 cups uncooked oat bran
2 tsp Baking powder
1 tsp salt
2 tsp cinnamon
1/2 cup stevia or coconut sugar (or other favorite sweetener)
3/4 cup Almond milk
1 Banana mashed
3/4 cup frozen blueberries defrosted
2 tsp vanilla extract

Steps:

  • Preheat your oven to 425 degrees F. In a large bowl, mix the dry ingredients together.
  • Create a "well" (or as I like to call it, a crater) in the middle of your dry ingredients. Add the wet ingredients and stir them together, then stir them into the dry ingredients until just combined.
  • Grease your muffin tins or line them with paper muffin cups. Bake for about 15 minutes or until the muffin tops start to turn golden brown and a fork or toothpick inserted into the middle of the muffins comes out clean. Enjoy!

1 3/4 cups oat bran (generic oat bran is usually too coarse, use a fine one)
1 cup flour
1 tablespoon baking powder
1/2 cup brown sugar
1/4 cup honey
1 teaspoon cinnamon
1/2 cup dried apricot (or raisins, or nuts, or whatever)
1 egg, beaten (or 2 egg whites)
2 tablespoons oil
1 1/4 cups skim milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
  • Separately beat the egg with 2tbs of sugar until fluffy and light.
  • Warm up milk (just until lukewarm) and dissolve honey in it.
  • Mix milk, egg, oil and vanilla.
  • Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
  • Line a muffin pan with paper baking cups.
  • Bake 18 to 20 minutes.
  • NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
  • To retain moisture, store in a plastic bag.
  • They're best served warm; reheating with the microwave works just fine.

1 cup oat bran
3/4 cup wheat germ
1/2 cup brown sugar, packed
1 tablespoon lemon rind, grated
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs, beaten
1 1/2 cups buttermilk
3 tablespoons vegetable oil
1 1/2 cups blueberries

Steps:

  • Combine whole wheat flour, oat bran, wheat germ, brown sugar, lemon rind, baking powder, baking soda and salt in a large bowl. Mix well.
  • In a measuring cup, combine eggs, buttermilk, vegetable oil and blueberries.
  • Add batter to muffin cups and bake in a 400 oven for 20 minutes.

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup brown sugar

1/4 cup margarine, melted

Steps:

  • Preheat oven to 400°F Grease muffins tins.
  • In a small bowl, combine oats and sour milk; let stand.
  • Combine the flour, baking powder, soda and brown sugar; stir well to blend.
  • Add eggs and margarine to oat mixture. Mix well. Add wet ingredients at once to dry.
  • Mix carefully, just until combined.
  • Gently fold in berries. Fill muffin tins 3/4 full.
  • Bake 15-20 minutes.
