Time 2h33m

Yield 8

Number Of Ingredients 16

¼ cup butter
2 ribs celery, quartered
1 large carrot, quartered
1 small onion, chopped
1 teaspoon mashed garlic
2 large bay leaves
½ teaspoon dried thyme
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon poultry seasoning
2 pounds bone-in chicken breasts
water to cover
2 tablespoons self-rising flour (such as White Lily®)
2 cups self-rising flour (such as White Lily®)
¼ cup cold shortening
¼ cup chicken broth, slightly chilled

Steps:

  • Melt butter in a stock pot over medium-high heat. Add celery, carrot, onion, garlic, bay leaves, thyme, salt, pepper, and poultry seasoning; cook and stir until flavors combine, about 5 minutes. Push vegetable mixture to the sides and add chicken; cook until browned, 3 to 5 minutes per side.
  • Pour enough water over the chicken to cover by 3 inches; bring to a boil. Stir, scraping the browned bits off of the bottom of the pot. Reduce heat; simmer until chicken is tender, about 1 hour. Transfer chicken and carrots to a serving plate with a large slotted spoon; let cool.
  • Ladle 1/4 cup cooking liquid into a bowl; cool slightly, about 5 minutes. Mix in 2 tablespoons flour. Stir back into the pot.
  • Place 2 cups flour in a large bowl; cut in shortening with 2 knives until mixture forms pea-sized bits. Mix in chilled chicken broth until dough is combined.
  • Turn dough out onto a floured work surface. Knead 5 to 6 times; pat down to 1-inch thickness. Sprinkle lightly with flour; roll out to about 1/8-inch thickness. Cut dough into squares with a sharp knife.
  • Drop squares, in batches, into simmering cooking liquid, moving squares to the side with each addition. Partially cover pot; simmer until dumplings are firm, about 12 minutes. Separate any dumplings that stick together. Remove from heat; keep covered.
  • Bone chicken; cut into bite-sized pieces and return to the pot. Chop carrot; return to the pot. Cool chicken and dumplings, about 30 minutes, before serving.

EASY CHICKEN DUMPLING RECIPE

Easy Chicken Dumpling Recipe image

This creamy soup is filled with fluffy dumplings, tender chicken and an enticing aroma! It will taste like a simmering soup that has cooked all day, BUT we'll take a shortcut or two. This hearty chicken soup has great flavor! It is so good everyone will want seconds!

Provided by Deb Clark

Categories     Soups and Stews

Time 45m

Number Of Ingredients 14

1 1/2 cups cooked chicken (diced boneless skinless chicken breasts)
2 stalks celery diced
2 large carrots (cleaned and diced)
1 onion diced
3 tablespoons butter
3 tablespoons flour
3 sprigs thyme (remove leaves and dice)
1 teaspoon salt
1/2 teaspoon black pepper
just a pinch of red pepper flakes
2 tablespoons olive oil
4 cups of chicken broth
1 package refrigerated bake and serve biscuit dough
1/2 teaspoon tumeric

Steps:

  • If you're using rotisserie chicken, pull meat from the bones, remove skin and dice or shred. You'll want about 1 1/2 cups chicken meat.
  • Using a large pot, heat the olive oil & butter over medium heat. When the oil is hot, add the onions, carrots, celery, red pepper flakes & thyme. Sauté' until the vegetables are soft stirring often - about 5-6 minutes.
  • Increase temperature to medium-high heat and sprinkle the flour over the mixture. Continue to cook for another minute.
  • Slowly pour in the chicken stock. As the mixture comes to a boil it will thicken. Add in the shredded chicken. Lower the heat to medium low.
  • Test for seasonings. If needed add salt at this time to taste.
  • Open the can of biscuits - remove three biscuits and slice into strips or a small dice. Keeping in mind they will triple in size when they are cooked. Sprinkle them over the top of the soup in one even layer (very important!), do not stack them on top of each other. Cover & simmer for 15-20 minutes until the biscuits are cooked thru.
  • The rest of the biscuits....you guessed it! Cook according to package directions and serve them with your meal.

These simply delicious chicken and dumplings have thousands of fans - this family-favorite dinner is my most popular recipe on Pinterest. The chicken stew takes help from a rotisserie chicken, but the dumplings are made from-scratch and practically fool-proof!

Provided by Foodtastic Mom

Categories     Main Course

Time 1h5m

Number Of Ingredients 17

1 rotisserie chicken (white and dark meat shredded and skin removed)
6 small carrots (peeled and diced)
3 ribs celery (diced (about 1 cup))
1 sweet onion (diced)
1/2 cup fresh parsley (finely chopped)
2 tbsp unsalted butter
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp black pepper
4 cups chicken stock
1 can cream of onion soup (you can also use cream of chicken or cream of celery)
2 cups all-purpose flour
4 tsp baking powder
1 tsp salt
3/4 cup milk
4 tbsp unsalted butter (melted)

Steps:

  • In a large stock pot over medium heat, melt the two tablespoons of butter and add the carrots, celery, onion, parsley and all the seasonings, salt through pepper. Cook until the vegetables are starting to soften, about 5 - 8 minutes.
  • Add the cream of onion soup, chicken stock and shredded rotisserie chicken. Stir well. Bring to a low boil and reduce heat to a gentle simmer.
  • To make the dumplings, whisk together the flour, baking powder and salt. Whisk together the milk and melted butter. Pour the milk mixture into the flour mixture and stir together with a spatula until a smooth ball of dough forms.
  • Using a 1.5 tablespoon capacity cookie scoop, drop the dumpling batter balls into the simmering stew one at a time until all the dough has been used. The dough should make 15 dumplings.
  • Cover the pot and allow to cook (without uncovering) on a low simmer for 25 minutes.
  • Serve immediately.

YUMMY CHICKEN SOUP WITH DUMPLINGS

Yummy Chicken Soup With Dumplings image

Make and share this Yummy Chicken Soup With Dumplings recipe from Food.com.

Provided by DelainaB

Categories     Low Cholesterol

Time 1h20m

Yield 10-12 serving(s)

Number Of Ingredients 7

64 ounces chicken broth
1 -2 lb baby carrots
4 -6 stalks celery, chopped
1 large onion
1 whole rotisserie chicken
2 (7 1/2 ounce) cans Pillsbury refrigerated biscuits
seasoning (I use salt, pepper, sage, and garlic)

Steps:

  • Pick up a Rotisserie Chicken from your local market.
  • Bring Chicken Broth to Biol.
  • Add your veggies and boil till tender.
  • Keep it boiling and drop in bits of biscuit. I just squish the biscuit and tear off little - medium pieces. Just remember they're going to expand -- if you put in big pieces of biscuit you end up with HUGE dumplings
  • When you're done dropping in the biscuits let that all boil together while you remove the meat from the chicken. Get as much as possible -- and chunk it up a little.
  • Reduce heat Drop the meat in and let all cook together for 5-10 minutes.
  • Remove from heat and let stand 5-10 minutes I stir it around and search for chunks of meat I too large to fit on a spoon and cut them down smaller.
  • Voila Chicken and Dumplings that no one will know didn't cook all day.
  • ~ Now if you want a creamier chicken and dumplings you can add a bit of milk/cream and flour mixed together and pour in after the dumplings.

DELICIOUS CHICKEN AND DUMPLINGS

Delicious Chicken and Dumplings image

Tired of super salty, quick-prep chicken and dumplings, my hubby and I set out to create a simple homemade version. In 2004 we came up with this, and we've been making it (to rave reviews from guests) ever since! Straight forward and simple, the trickiest part is remembering to put the flour and milk in AND remove the Bay Leaf. We hope you enjoy this "comfort food" as much as we do!

Provided by SiouxzQzz

Categories     Stew

Time 1h

Yield 4 serving(s)

Number Of Ingredients 17

1 1/2 lbs chicken, boneless skinless breasts, cut into one-inch cubes
2 garlic cloves
2 tablespoons oil
3 cups vegetable broth (or water)
2 teaspoons chicken bouillon
1 teaspoon salt
1/4 teaspoon pepper, freshly cracked
1 bay leaf
1/2 onion, chopped
4 stalks celery, sliced
5 carrots, sliced
optional chopped fresh broccoli
optional 3 Tablespoons, fresh snipped parsley
optional corn (fresh or frozen)
1/3 cup flour
1/2 cup milk
14 ounces Pillsbury Grands refrigerated buttermilk biscuits (8 biscuits)

Steps:

  • Heat oil in Dutch oven (or a nice big pt that you have a lid for) on medium high heat, add cubed chicken and garlic. Stir; cooking until chicken is white.
  • Add broth, bouillon, salt, pepper, bay leaf, and fresh vegetables to create a stew. Bring to a boil.
  • Reduce heat on stew; simmer on low, covered, 30 minutes, or until chicken and vegetables are tender.
  • While stew simmers, open biscuits and set out on a plate (to rise) or make your own biscuits.
  • In separate container, mix flour and milk. After 30 minutes of simmering, remove bay leaf from broth, then whisk flour and milk into broth on stove. Stir well.
  • Add biscuits to top of stew. Cover and continue cooking on low heat 15 minutes.
  • Let stand a few minutes before serving.
  • VARIATION: Make homemade or Biquick biscuits instead of canned.

EASY CHICKEN AND DUMPLINGS FROM SCRATCH

Easy Chicken and Dumplings from Scratch image

This Chicken and Dumplings recipe is SO EASY to make from scratch if you use rotisserie chicken and store-bought broth! It's a fast, easy comfort food to make on busy nights. The fresh thyme in the dumplings sets it over the edge.

Provided by Elizabeth Lindemann

Categories     Soup

Time 30m

Number Of Ingredients 12

4 tablespoons butter (divided)
2 carrots (diced small)
2 stalks celery plus their leaves (diced)
1 onion (diced)
1 1/4 cup all-purpose flour (divided)
4 cups low sodium chicken stock/broth
1 cup whole milk (divided)
1 teaspoon kosher salt
1 teaspoon baking powder
1 teaspoon chopped fresh thyme leaves (or 1/2 teaspoon dried, plus more for garnish)
2 cups cooked diced or shredded chicken
extra salt and pepper

Steps:

  • Sauté the carrots, celery, and onions in 2 tablespoons of the butter in a large pot over medium high heat until softened a bit and beginning to brown (about 3 minutes).
  • Add 1/4 cup flour, stir to coat.
  • Add chicken broth (4 cups) and bring to a boil.
  • Turn the heat down to simmer and add 1/2 cup milk and the chicken. Season with salt and pepper.
  • Meanwhile, to make the dumplings, mix together the remaining 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon fresh thyme leaves. Stir in the remaining 2 tablespoons of butter, melted, until flour mixture is crumbly looking. Add the remaining 1/2 cup of milk and stir until JUST combined. Do NOT over mix, or your dumplings may be dense.
  • Add spoonfuls of the dumpling mixture to the simmering pot- I recommend using a small cookie scoop for this (a tablespoon can also be used).
  • Cover and simmer on low for 15 minutes, or until dumplings are fluffy, cooked, and float to the top. No peeking!
  • Serve garnished with extra fresh thyme and fresh ground pepper, if desired.

  • In a 5 Qt soup pot, over medium heat, add 3 Tbsp olive oil and saute 2 sticks diced celery and small finely diced onion until softened (5 min). Add thinly sliced carrots and continue to cook until onions and celery are golden (3-4 min).
  • Into the same pot, pour in 6 cups chicken broth and 6 cups water along with 1 Tbsp salt and all of your chopped potatoes. Bring to a boil then cook 10 minutes, or until potatoes are nearly done.
  • Meanwhile, make your dumplings: Sift 2 cups flour, 1/2 tsp salt and 1/4 tsp sugar into a medium bowl. P.S. I measured 2 cups flour before sifting - scoop it into the measuring cup, then scrape off the top for an accurate measurement. Make a well in the center and add 2 eggs with 1 Tbsp sour cream. Fold together with a spatula. Your dough will look like scraps of cloth. Pour in 6 Tbsp melted butter and stir/ knead with spatula until butter is well incorporated and dough is uniform in texture and color. It should be very soft but won't stick to your hands.
  • Transfer dough to a smooth cutting board. Separate your dough into two pieces, roll each piece into a long slim log and cut thin slices from each log. Don't cut them too big since they expand in the soup. You want them to be small and bite-sized. The dough should not stick to the knife or cutting board because of all the butter in it.
