MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:
- Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
- Add the baking soda and flour.
- Combine well for 2-3 minutes.
- Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.
YUMMY BANANAS
Steps:
- Place the sugar, butter, vanilla bean if using and ginger in a 10-inch pie plate or quiche dish. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a 650- to 700-watt microwave oven for 2 minutes. Prick the plastic to release steam.
- Remove from the oven and uncover. Remove the vanilla bean and ginger and stir in the orange juice. If using vanilla extract, add it now. Arrange the bananas in the dish, pinwheel fashion, and spoon over the sauce. Cover tightly with microwave plastic wrap and cook for 3 minutes. Prick the plastic to release steam.
- Remove from the oven, uncover and serve warm over ice cream or with whipped cream.

Steps:
- Preheat oven to 350°F.
- With an electric mixer, cream the butter and sugar until light and fluffy, next add the eggs; beat thoroughly.
- Add the honey and mix well.
- Sift in the dry ingredients.
- Blend well.
- Add sour cream, bananas and vanilla; again blend well.
- At this time if you are adding nuts add them and mix them thoroughly.
- You can bake this as muffins, mini breads or a bread, it's up to you.
- Adjust the baking time to the choice you make.
- For a bread bake one hour or until a toothpick comes out of the center and its clean.
